I like to have some in my fridge and freezer at all times to make easy dinners (like this one!) even easier.

If you have an Instant Pot, just cook your chicken breasts in it. If not, boiling on the stove is very easy, too.

When your chicken is cooked, put it in your stand mixer and use the paddle attachment to shred it quickly.


But if you don't have a stand mixer, don't despair! You can always use a hand mixer or forks to pull it apart. Your chicken will be so tender that it just falls apart.

Prepping shredded chicken ahead of time makes dinner time much easier.

You can use it to make chicken bundles, chicken casseroles, healthy chicken salad, and even chicken pizzas with it. It's a kitchen staple around here!

Ingredients In This Healthy Chicken Casserole

To make this easy chicken casserole you'll need:

  • Shredded chicken (see above!)
  • Cream cheese (softened)
  • Sour cream
  • Diced green chiles (from a can)
  • Shredded cheese (you can buy it already shredded if you prefer!)
  • Cumin
  • Salt

You can choose whichever kind of cheese you have on hand or whichever sounds the yummiest to you.

A bag of shredded Mexican blend cheese would work well here, as would Monterrey jack, or even mozzarella. You can use cheddar, too.

If you use a soft white cheese it will have more of a creamy flavor and texture, whereas the cheddar or cheddar blends will make the cheese flavor more sharp and the texture more gooey. (My favorite!)

You're not going to believe how easy this casserole is to make!

Put all your ingredients together in a bowl and stir. Then put them into an 8x8 casserole dish, sprinkle with a little extra cheese, and bake until the cheese is golden and your casserole is bubbly.

Ingredients

  • 8 Ounces Cream Cheese, Softened
  • ¾ Cup Sour Cream
  • 1 7 Ounce Can Diced Green Chiles
  • ½ Teaspoon Cumin
  • ¼ Teaspoon Salt
  • 3 Cups Diced or Shredded Chicken
  • 1 ¼ Cups Shredded Cheese of choice, Divided

Instructions

  • Preheat oven to 350.
  • In a large bowl, mix all ingredients together, reserving ¼ cup shredded cheese.
  • Spread mixture into an 8x8 glass dish.
  • Sprinkle reserved ¼ cup of cheese over top of casserole.
  • Bake for 35-40 minutes, or until cheese is golden, and casserole is bubbly.

    Just made this and my mouth is currently full of this rich chickeny goodness! I couldn't even wait to finish dinner before commenting. The only difference is I didn't have green chillies so I used chopped jalapenos and I added in a package of frozen cauliflower rice to get some veggies in. IT. IS. AMAZING.

  6. Do you think it would be ok to add some frozen broccoli? Still a THM S? I will need to double the recipe and I thought adding chopped frozen broccoli would help stretch the recipe.

    1. I add about 5 to 8 ripped up stone ground tortillas and a green verde sauce and it’s ohh so good. I also put most of my cheese on top!! So good if u wanna cheat a bit on the diet!

    I made this last night and it was a hit with both me and my husband!! I cut it in 8 portions; we both had 2 servings...probably shouldn't have. I place star stickers on recipes that we like and this is definitely a star!! I fried "non-breaded" okra in a skillet with coconut oil to serve with mine. I love your recipes!

    Made this tonight with 1/3 less fat cream cheese. The 4 of us ate the whole dish, it was sooo delicious. It tasted like the carb heavy chicken enchiladas I used to make. It’s not spicy at all but has a great flavor.

    The hubby says its one I can make again, lol. That is high praise. I usually get a "meh" from him and the girls but they eat what I make or forage for themselves. This was very easy and very tasty. He of course used some blue corn tortillas with his. Thank you for all your recipes and ideas.     Such an easy recipe for when you have a bunch of shredded chicken needing to be used up! This is very much like a white chicken enchilada recipe I used to make in my carb-eating days. Thanks for re-creating that for me so I can enjoy it in a healthier way now!

    Made this recipe for dinner tonight. As suggested by some others, I added a can of black beans (drained), one cup of cauliflower rice, one can of green enchilada sauce, and one tsp of cumin instead of 1/2 tsp, topped with the shredded cheese as directed and some sliced black olives. Turned out very tasty but it made a lot—esp for two people. I will freeze the rest. I used nonfat yogurt in place of the sour cream and Neufchâtel cream cheese instead of the regular. That brought the calories down to 396, fat 20.1, carbs 15.2, fiber 3.9, and protein 37.2 according to the Lose It app. This would, in my opinion, also be a good dip for a large party—served with tortilla chips or Fritos.

  19. I made this recipe earlier this week. I left out the chilies and cumin for more of a crack chicken dish. I used rotisserie chicken that I had previously bought, removed from the bones and had in the freezer. It was good and I felt good being able to serve a low carb dish to my diebetic husband and the whole family could enjoy.
