I will be one of the first ones to confess that oatmeal is not my breakfast of choice. I much prefer baked oatmeal to stovetop oatmeal. I have several baked oatmeal recipes, including Upside Down Peach Oatmeal Bake and Upside Down Pineapple Oatmeal.
My kids, however, LOVE oatmeal! (I know, aren’t they strange? Most kids detest it!) My daughter even prefers hers (horror!) in the microwave. She doesn’t like it cooked on the stovetop. Oh well, to each their own, I suppose.
I am thankful my kids love oatmeal, as it is such a frugal breakfast! I can get a 25 pound bag of old fashioned rolled oats for about $18 at my local Cash & Carry Store. That makes for a very inexpensive breakfast!
Pumpkin steals most of the show in the fall, but I believe that apples and maple are just as much a fall flavor as pumpkin! So, for all you pumpkin haters out there (are there really people who hate pumpkin?), this recipe is for YOU! (And hopefully a few more to come!) I would add some collagen coffee or a side of Greek yogurt to up the protein count if you were eating this for breakfast.
This maple apple oatmeal does not take long to make, but I’m sure you could even make it as overnight oats. To do that, I would suggest mixing all the ingredients together, adding half a cup of Greek yogurt, and leaving it in the refrigerator overnight. In the morning, you could heat it on the stove or in the microwave.
So, what do you need for this Maple Apple Oatmeal?
1 Small Apple, Chopped (about 3/4 cup)
2-3 Tablespoons Erythritol (or your favorite sweetener)
1/2 Teaspoon Cinnamon
1 Teaspoon Maple Extract
1/2 Cup Old Fashioned Rolled Oatmeal
Pinch of Salt
1/2 Cup Unsweetened Almond or Cashew Milk
1/2 Cup Water

Maple Apple Oatmeal
- In a medium sauce pot, combine the chopped apple, erythritol, cinnamon and maple extract.
- Sautee until apples begin to soften.
- Add remaining ingredients and bring to a simmer.
- Simmer for 5-6 minutes, or until oatmeal begins to thicken.
- Taste and add more sweetener or maple extract if you prefer.
