Low Carb Cabbage Roll Casserole

Ingredients

  • 2 Pounds Ground Beef
  • 1 Onion , diced
  • 3 Cloves Garlic , minced
  • 23 Ounces Tomato Sauce , 1 15oz can + 1 8oz can
  • 1 Teaspoon Dried Thyme Leaves
  • ½ Teaspoon Dried Dill
  • ¼ Teaspoon Ground Sage
  • ½ Teaspoon Salt
  • ½ Teaspoon Black Pepper
  • ¼ Teaspoon Ground Cayenne
  • 1 Head Cabbage , cored and coarsely chopped
  • 1 Cup Mozzarella Cheese

Instructions

  • Preheat the oven to 375 degrees. Prepare a 9x13 casserole dish with nonstick cooking spray.
  • In a large skillet over medium-high heat, cook the ground beef with the onion, crumbling the beef as it cooks. When the beef is no longer pink, stir in the garlic. Drain the beef well and return to the skillet.
  • Add the 15oz can of tomato sauce to the skillet with the dry seasonings. Stir and simmer over medium-high heat for 2 to 3 minutes.
  • In a large mixing bowl, combine the ground beef sauce and cabbage, stirring until the cabbage is coated in the sauce.
  • Transfer the combination to the prepared baking dish. Top with the 8oz can of tomato sauce.
  • Cover the dish with aluminum foil and bake for 45 minutes.
  • Remove the aluminum foil and sprinkle the cheese in an even layer.
  • Return the casserole to the oven and continue baking for 10 minutes or until the cheese has melted.

Notes

If you'd like to make this even lower in carbs, follow the steps below:
  • Use 8 ounces of beef broth to replace 8 ounces of the tomato sauce that you add to the skillet in step 3.
  • Omit the onion and use 1 teaspoon onion powder instead
This will reduce the carbs to 8 net carbs per serving and the calories to 268 per serving.
SLOW COOKER INSTRUCTIONS
  1. Begin at step 2 and follow the instructions through step 4.
  2. Instead of placing the meat and cabbage mixture in a prepared pan, place it in your prepared slow cooker liner.
  3. Cook at low heat for 2-3 hours, or until the cabbage has cooked through.
  4. Remove the lid and sprinkle the cheese over the top, then put the lid back on until the cheese has melted.
