Keto No-Bake Cookies

These easy Keto No Bake Cookies are low carb, full of chocolate and peanut butter, and made with coconut instead of oatmeal. One of the best (and quickest) keto cookies - ready in less than 15 minutes!

Instructions

  • Line a cookie sheet with parchment paper and set aside.
  • Microwave the butter until fully melted and then stir in the peanut butter until it is a thinner consistency, then mix until smooth.
  • Mix in cocoa and Gentle Sweet until well combined.
  • Mix in the coconut.
  • Using a small cookie scoop, make 12 cookies on your sheet pan.
  • Place them in the freezer for 10 minutes to solidify, then enjoy!

Notes

If you do not have Gentle Sweet, you can use any confectioners type powdered sugar substitute. Or simply use my Low Carb Powdered Sugar as an equal substitute.
If you like things very sweet, you may want to add a touch more Gentle Sweet (5-6 Tablespoons).
These cookies are best stored in the refrigerator or freezer.
