Ingredients

  • 2 stalks celery diced
  • 1 small onion diced
  • 4 cups Low sodium chicken broth
  • 1 13.5 ounce can coconut milk
  • 2 tablespoon ranch seasoning mix
  • ½ cup wing sauce
  • 2 pounds boneless skinless chicken thighs, cut into bite size pieces
  • 1 to 2 teaspoons xanthan gum for thickening

Instructions

  • Place all ingredients EXCEPT xanthan gum into the slow cooker. Stir to combine.
  • Cover the slow cooker and cook on high for 3 hours.
  • Stir in xanthan gum, if desired, and allow to cook an additional 15 minutes or until thickened.
