Pizza Omelette (Low Carb, THM-S)


  • 2 Large Eggs
  • 1/2 Cup Shredded Mozzarella Cheese
  • 3 Tablespoons Pizza Sauce
  • 8 Slices Pepperoni
  • 1-2 Tablespoons Sautéed Onions Optional
  • 1/4 Cup Canned Mushrooms Optional
  • 1-2 Teaspoons Butter
  • Oregano and Garlic Salt


  • Preheat a medium sized skillet over medium heat.
  • Whisk the two eggs together.
  • Melt butter in skillet, then pour eggs into pan.
  • Cook until just set, then flip eggs over to cook the other side.
  • Add a few tablespoons of shredded cheese to one side, then add remaining toppings (on one side).
  • Fold the eggs in half and move to a plate.
  • Sprinkle with garlic salt and oregano if desired.
