- 2 Pounds Russet Or Yukon Gold Potatoes Peeled And Cubed
- 1 Teaspoon Salt For Boiling Water
- 1 Cup Cottage Cheese
- 2 Tablespoons Butter
- ¼ Cup Milk Or Almond Milk, Adjust To Desired Consistency
- ½ Teaspoon Garlic Powder Optional
- Salt And Pepper To Taste
- 2 Tablespoons Chopped Fresh Parsley Optional, For Garnish

Place the cubed potatoes in a large pot and cover with water. Add 1 teaspoon of salt and bring to a boil over medium-high heat.
Reduce heat and simmer for 15–20 minutes, or until potatoes are fork tender.
Drain the water and return the potatoes to the pot.
Add the cottage cheese, butter, garlic powder (if using), and season with salt and pepper.
Use an immersion blender to blend the mixture until smooth and creamy. (Alternatively, use a hand mixer or mash by hand for a chunkier texture.)
Adjust consistency with milk as needed.
Garnish with fresh parsley and serve warm.
