Ingredients

  • 2 Pounds Russet Or Yukon Gold Potatoes Peeled And Cubed
  • 1 Teaspoon Salt For Boiling Water
  • 1 Cup Cottage Cheese
  • 2 Tablespoons Butter
  • ¼ Cup Milk Or Almond Milk, Adjust To Desired Consistency
  • ½ Teaspoon Garlic Powder Optional
  • Salt And Pepper To Taste
  • 2 Tablespoons Chopped Fresh Parsley Optional, For Garnish

Instructions

  • Place the cubed potatoes in a large pot and cover with water. Add 1 teaspoon of salt and bring to a boil over medium-high heat.
  • Reduce heat and simmer for 15–20 minutes, or until potatoes are fork tender.
  • Drain the water and return the potatoes to the pot.
  • Add the cottage cheese, butter, garlic powder (if using), and season with salt and pepper.
  • Use an immersion blender to blend the mixture until smooth and creamy. (Alternatively, use a hand mixer or mash by hand for a chunkier texture.)
  • Adjust consistency with milk as needed.
  • Garnish with fresh parsley and serve warm.
