In a skillet over medium heat, cook ground beef and onion until browned and onion is softened. Add garlic and cook for 1 more minute. Drain excess fat.
Stir in taco seasoning, black beans, corn, diced tomatoes, and salsa. Simmer 2–3 minutes.
Spray the crock pot with nonstick cooking spray. Place 2–3 whole tortillas flat on the bottom, overlapping slightly to cover.
Spread enough meat mixture over the tortillas to cover, and then sprinkle with the cheese.
Continue adding layers ending with the meat mixture and a layer of cheese.
Cover and cook on low for 4–5 hours, until heated through and the cheese is melted.
Let rest 10 minutes before slicing and serving. Top with optional garnishes.
The nutritional information was calculated with 12 street taco tortillas and without optional toppings.
The amount of tortillas needed depends on their size and how they fit in your slow cooker.
Divide the filling and cheese among the layers, reserving enough for the top.
Use mild salsa and seasoning if you prefer less heat.
- Low-carb tortillas: Substitute small low-carb tortillas and layer as directed.
- No tortillas: Spread the prepared filling in the greased slow cooker and top with cheese. Cover and heat on low until hot throughout and the cheese is melted; it will cook significantly faster. Expect a more liquid, saucy filling. Serve over cauliflower rice, in lettuce cups, or in taco bowls.
- Please note: beans and corn still add carbs even when using low-carb tortillas or omitting the tortillas.
