Prepare a large baking sheet with parchment paper.
Place the sugar substitute, paprika, cornstarch, and seasonings into a gallon sized freezer bag and shake to combine.
Place 3 or 4 chicken drumsticks into the bag at a time and shake to coat the chicken in the seasonings. Remove the chicken from the bag and shake to remove any excess seasoning blend. Place the chicken on the prepared baking sheet.
Refrigerate the chicken for 8 hours.
Preheat the oven to 325 degrees.
Bake the chicken for 60 to 70 minutes or until the internal temperature reaches 170 degrees.
Allow the chicken to rest for 5 minutes prior to serving.
