- 1 lb Ground Beef, browned and drained
- 1 tablespoon Taco Seasoning
- ¼ cup Water
- 1 bag Baby Bell Peppers, halved and seeded
- 1 cup Fiesta Cheese Blend, shredded
- ¼ cup Creamy Guacomole
- ½ cup Sour Cream
- Chopped Cilantro
- Black Olives, sliced
- Sliced Limes or Lime Wedges

Preheat the oven to 425 degrees. Prepare a baking sheet with aluminum foil and a spritz of nonstick cooking spray.
In a skillet over medium-high heat, stir together the browned ground chuck, taco seasoning and water. Bring to a simmer and cook until the water has evaporated.
Place cut bell peppers on the baking sheet with the cut side up. Fill each bell pepper with meat, packing evenly.
Sprinkle bell peppers with cheese.
Bake for 10 or 15 minutes or untillthe cheese is melted and the bell peppers are tender.
Serve topped with sour cream, salsa, fresh cilantro, sliced black olives and guacamole if desired.
