Using a mini cookie scoop or spoon, drop small mounds of the yogurt mixture onto a parchment-lined baking sheet. Freeze for at least 1 hour, or until firm.
Melt the Chocolate:
In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat in 15- to 30-second intervals, stirring after each, until fully melted and smooth.
Use full-fat Greek yogurt for the creamiest texture.
For dairy-free, substitute with a thick plant-based yogurt and vegan chocolate chips.
These bites can be stored in the freezer for up to 2 months.
