- 4 Cups Shredded Mozzarella Cheese
- 8 Low-Carb Tortillas
- ½ Cup Pizza Sauce
- 48 Pepperoni Slices

Heat a large, nonstick skillet over medium-high heat.
Add ½ cup of mozzarella cheese to the skillet and allow to melt without disturbing.
Top the cheese with a tortilla, gently pressing the tortilla into the cheese. When the cheese is beginning to brown, carefully flip the tortilla. The cheese will be attached to the tortilla.
Add about 1 tablespoon of pizza sauce to the middle of the tortilla and then top with about 6 slices of pepperoni.
Carefully roll up the tortilla from one side to the other.
A nonstick skillet is required. If desired, you can spritz the skillet with nonstick cooking spray to help the cheese lift from the skillet.
