  • In a small saucepan, combine the almond milk, pumpkin purée, and sugar substitute. Heat over medium-low, stirring frequently until the mixture is hot but not boiling.
  • Stir in the brewed chai tea, pumpkin pie spice, and vanilla extract. Continue to heat for another 2-3 minutes until well combined and heated through.
  • Pour the latte into mugs and top with whipped cream and a sprinkle of cinnamon if desired. Serve immediately.
    You can also serve with a star anise and a cinnamon stick (as shown in the photos).

Notes

You can use any kind of milk you like (regular dairy, oat milk, etc), but the recipe's nutritional information was calculated using unsweetened almond milk.
You can use any sugar substitute you like, but make sure to take into account the varying sweetness among them. I like to use a monkfruit/erythritol blend and 2 Tablespoons would be perfect (this is what was used to calculate the nutritional information).
Whipped cream was not included in the nutritional information.
