Get Recipe Ingredients
In a blender or food processor, combine the strawberries, cottage cheese, keto maple syrup or keto honey, and vanilla extract.
Blend until smooth and creamy.
Pour the mixture into a freezer-safe container and smooth the top with a spatula.
Cover and freeze for at least 4 hours or until firm.
Let sit at room temperature for 5–10 minutes before scooping and serving.
Customize the flavor by adding chopped strawberries, chocolate chips, or your favorite mix-ins after blending.
You may need to adjust the sweetener amounts depending on the sweetness of the berries. I recommend tasting the mixture before freezing to see if it needs more sweetener.
You can use monk fruit or allulose, but you may need more of these to achieve the same sweetness.
