Easy Low Carb Cheeseburger Salad {THM-S}

All the flavors of a juicy cheeseburger in a light and lovely salad.

Low Carb Cheeseburger Salad (THM-Friendly)

This meal is one of my family's favorites - even my almost nine year old son scarfs it down! I call that an accomplishment!

The first time I heard of this salad was from my sister-in-law, Janelle. She had been to a Pampered Chef party and this is what the consultant prepared. However, that version had hamburger buns cut into strips and toasted for croutons, as well as french fries for a topping.

Low Carb Cheeseburger Salad (THM-Friendly)

As I said, this is one of my go-to meals. A lot of people turn their nose up when they hear it has ketchup, mustard, and pickles. But usually their skepticism turns to praise when they take the first bite. If you don't care for onions,leave them out. If you like avocado on your hamburgers, add some diced avocado - this recipe is very adaptable.

This is a quick supper as well. From stove to table in less than thirty minutes - that's always a plus in my book!

As written, this is a solid "S" for Trim Healthy Mamas, but if you wanted a healthy Crossover, feel free to top your salad with a handful of sweet potato fries. Delicious!

Low Carb Cheeseburger Salad

Easy Low Carb Cheeseburger Salad {THM-S}

  • 1.5-2 pounds ground beef (or venison)
  • ½ cup sugar free Ketchup
  • ¼ cup yellow mustard
  • 1 cup chopped pickles (or 1 small jar of dill relish)
  • Lettuce for salads
  • Salad toppings (onions, tomatoes, cheese, etc)
  1. Brown hamburger and drain well.
  2. Add ketchup, mustard and pickles.
  3. Place lettuce on plates and top with hamburger mixture.
  4. Add toppings and enjoy!

NOTES: If you want an extra pop of flavor, you can add 1 teaspoon each of garlic powder and onion powder to the meat mixture.

We don't usually use any dressing on this salad, though my husband sometimes uses Ranch. Try it first without dressing - I don't think you'll miss it!

When I am in a hurry I like to use a small jar of Vlasic dill pickle relish in place of the diced pickles. It's so easy - just dump it in (no dicing pickles).

If you would like a Crossover, feel free to add a handful of sweet potato fries.

    I am a big fan of Cheeseburgers, which have become "Naked" bun-less burgers since I have waved good-bye to junk foods a few years ago. What a great idea to just turn it into one big salad. Love it!

      This should make 4-6 servings (depending on how large the portions are). And yes, the leftovers are great!
