A delicious baked oatmeal that will have your kids begging for breakfast! A sweet pineapple topping graces a sweet and chewy oatmeal bake. This recipe is sugar free and a Trim Healthy Mama E Fuel.

Pineapple Upside Down Oatmeal (Sugar Free, THM-E)

A few weeks ago I posted an Upside Down Peach Oatmeal Bake. It has had a lot of views, and to be honest, I was a little surprised. I mean, it's OATMEAL! But, as it turns out, people like oatmeal (and oatmeal variations)!

That day I made peach because I did not have pineapple, and I explained how my sister-in-law had made pineapple oatmeal when I was visiting her this summer. I have not forgotten how delicious it was! After I made this recipe today, I left it sitting on the counter to cool, and one of my dorm boys asked if he could have a piece of the "fruit cake." I obliged, and he had a healthy snack!

Now, I suppose you could say that I cheated because I used canned pineapple tidbits. Yes, maybe I did, but it was much faster! And I can be a Drive-Thru Sue at times! (Can I get an Amen from my fellow Trim Healthy Mamas?) If you want to use fresh pineapple, (my sister-in-law did), feel free to lay the fresh pineapple slices in the bottom of the pan, instead of the canned tidbits. It will be just as delicious! And one more thing, make sure you get the pineapple that is in its own juice. You do not want the pineapple with sugar added.

This baked oatmeal can be thrown together in a snap, and it only takes about half an hour to bake. I did add Pristine Whey Protein Powder to bump up the protein count, but that is not absolutely necessary. If you do not have protein powder, just omit it.

So, what do you need for this recipe?

1 8 Ounce Can Pineapple Tidbits in 100% Juice

1  Cup + 1 Tablespoon Xylitol, Divided

ÂĽ Teaspoon Cinnamon

2 Cups Old Fashioned Oatmeal (Uncooked)

â…“ Cup Whey Protein

2 Teaspoons Baking Powder

½ Cup Plain Greek Yogurt

1 Cup Unsweetened Almond Milk

ÂĽ Teaspoon Salt

Upside Down Pineapple Oatmeal (Sugar Free, THM-E)

Ingredients

  • 1 8 Ounce Can Pineapple Tidbits in 100% Juice Undrained
  • 1 Cup + 1 Tablespoon Xylitol Divided
  • ÂĽ Teaspoon Cinnamon
  • 2 Cups Old Fashioned Oatmeal Uncooked
  • â…“ Cup Pristine Whey Protein Powder
  • 2 Teaspoons Baking Powder
  • ½ Cup Plain Greek Yogurt
  • 1 Cup Unsweetened Almond Milk
  • ÂĽ Teaspoon Salt

Instructions

  • Preheat oven to 375.
  • Pour pineapple (undrained) into a greased 12 inch cast iron skillet.
  • Sprinkle 1 Tablespoon Xylitol over pineapple.
  • In another bowl, mix all remaining ingredients.
  • Pour oatmeal mixture over pineapple.
  • Bake for 30-35 minutes, or until center is set and no longer jiggles.

      1. would it be equal parts collagen to whey? Or would you use less collagen? Also What is a good sway for the yogurt? I have recently learned I am Dairy intolerant ...so going DF and trying to figure out all the swaps!

  1. This looks amazing! I was so excited to try it until I saw that you used xylitol only. I have an (Ahem) unfortunate reaction to that sweetener and wondered what else I could use? So excited to try! I LOVE pineapple upside down and I'm hoping it'll make oatmeal more palatable to me!

  2. Can I substitute the xylitol with Gentle Sweet, if so how much would I use. Also will the Whey protein from THM work? Thanks!

    1. Yes, I would start with 2/3 cups Gentle Sweet or a little less, then add more to taste. I used the Pristine Whey Protein from THM. 🙂

  3. I thought oats had to be soaked for THM? Doesn't it make them easier to digest and less likely to spike blood sugar that way?

    1. Hi Rina! Yes, soaking the oats does make them easier to digest, but it is not required on THM. (Recommended if you want to, but not required.) You could mix up this dish the night before - that would allow the oats to soak overnight. 🙂

    In the oven. Just 2 of us so thought about halving recipe. Had another thought—mixed up entire recipe & will refrigerate some & freeze some...breakfasts done with just a warm over. Love your recipes!

    1. I know this is an old comment, but I am wondering if you did freeze some, and if it tasted good after being frozen. I know the oatmeal part should not be a problem. Just really wondering how the pineapple held up.

    This was amazing! I doubled the recipe and cooked in a 9 x 13 cake pan because I think my family will actually eat this one! So good right out of the oven. Tastes like chewy pineapple upside down cake. Delicious!

    Thank you so much for a delicious way to start my week! I only had some Vanilla Okios Triple Zero yogurt, so I used that and cut back on the Xylitol and it was perfect! I had leftover fresh pineapple that needed to be used and this was a perfect use for it! Thank you again for creating such delicious recipes!
