Ingredients

  • ¼ Cup Strawberries , finely chopped
  • ¼ Cup Walnuts , chopped
  • 2 Tablespoons of Lily’s baking chips melted
  • 8 Ounces of Cream Cheese
  • 2 Tablespoons of Swerve powdered sugar
  • 1 tablespoon Vanilla Extract
  • 1.5 Cups Full Fat Plain Greek Yogurt

Instructions

  • Line a sheet pan with parchment paper.
  • In a bowl with a hand mixer, mix the soft cream cheese and then add the Swerve.
  • Mix in the yogurt and vanilla and mix for 1 -2 minutes. It will be slightly fluffy.
  • Place your bark mixture in a pan. You can make it whatever shape you want. Since I used a smaller pan (9x13), I just filled the bottom.
  • Using your melted chocolate. Make dollops on the yogurt and then with a toothpick or knife, swirl it into the bark.
  • Sprinkle with strawberries and walnuts.
  • Freeze for 3+ hours to set.
  • Cut and serve immediately.

Notes

The bark will melt within a few minutes. You will need to keep it in the freezer after you cut it.

You can use 3 Tablespoons of Gentle Sweet in place of the Swerve.
