This Bacon Cheeseburger Meatloaf combines the best flavors of a cheesy bacon burger with the comforting texture of meatloaf.

Ingredients

  • 1 ½ Pounds Ground Beef or Lean Ground Beef
  • 1 Cup Breadcrumbs substitute with crushed pork rinds for low-carb (see notes)
  • 1 Cup Shredded Cheddar Cheese
  • 4 Slices Cooked Bacon Crumbled
  • 1 Egg
  • ½ Cup Milk
  • ¼ Cup Ketchup
  • 1 Tablespoon Mustard
  • 1 Tablespoon Worcestershire Sauce
  • ½ Teaspoon Garlic Powder
  • ½ Teaspoon Onion Powder
  • Salt and Black Pepper to Taste
  • 1 12-Ounce Package Bacon (for wrapping the meatloaf)

Instructions

  • Preheat oven to 350°F (175°C). Grease a Loaf Pan or line it with parchment paper.
  • In a Large Bowl, combine Ground Beef, Breadcrumbs, Shredded Cheddar Cheese, Crumbled Bacon, Egg, Milk, Ketchup, Mustard, Worcestershire Sauce, Garlic Powder, Onion Powder, Salt, and Black Pepper. Mix until well combined, but do not overmix.
  • Shape the Meatloaf Mixture into a loaf and place it in the prepared Loaf Pan.
  • Wrap the meatloaf with Bacon Slices in a criss-cross pattern, tucking the ends underneath.
  • Bake for 1 hour to 1 hour and 15 minutes, or until a Meat Thermometer reads 160°F (71°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

For low-carb: 
Replacing the bread crumbs with crushed pork rinds will bring the carb count down to 7 carbs per slice. 
Trim Healthy Mama:
You can use crushed pork rinds instead of bread crumbs and sugar-free ketchup to make this a THM:S meal.
Storage & Freezing Tips:
  • Refrigerate: Store leftovers in an airtight container for up to 4 days.
  • Reheat: Warm in a 350°F oven for about 10 minutes or in a skillet for crispy edges.
  • Freeze: Wrap tightly in Foil and store in a Freezer-Safe Bag for up to 3 months.
  • Thaw overnight in the fridge before reheating.
