Low Carb Poodle Doodles
A delightful peanut butter candy with nuts and coconut, all dipped in chocolate. These will soon become one of your favorite Christmas candies! This recipe is low carb, sugar free, gluten free, and a Trim Healthy Mama S Fuel.

Get Recipe Ingredients
In a large bowl, melt butter and peanut butter, then mix well.
Add coconut, chopped nuts, Gentle Sweet, and flaxmeal, then stir.
Place in the freezer for 15 minutes to for mixture to become firm enough to form into shapes.
Remove from freezer and form into 2 inch long rectangles/logs. Place back in the freezer for 10 minutes.
In a microwave safe bowl, combine chocolate chips and coconut oil, and melt. (I do mine in 30 second increments so I do not scorch the chocolate.)
Stir chocolate well, then dip each candy into chocolate and roll to coat.
Place on parchment paper or wax paper, and return to freezer until chocolate hardens. (About 15 minutes or so.)
Store in refrigerator.
I highly recommend using the Trim Healthy Mama Chocolate Chips, as they melt so much more nicely! However, if you do not have them, you can use Lily's Chocolate Chips.
Gentle Sweet is a powdered blend of xylitol, erythritol, and stevia. If you want to make it yourself, check out this DIY recipe.
Make them as Bars
The majority of the time now, when I make them, I make them as bars. It is SO much easier and less time-consuming!
Simply spread the mixture in an 8x8 pan, then pour the melted chocolate (or butterscotch) on top!
You're done in about 5 minutes!

Can I substitute the flax meal, coconut or nuts?
Yes, absolutely!
Just add the same amount of another ingredient.
Replace the coconut with more nuts.
Replace the flax meal with more coconut, etc.
Can I use almond butter instead of peanut butter?
Yes! They will still be just as delicious!
