Low Carb Poodle Doodles
A delightful peanut butter candy with nuts and coconut, all dipped in chocolate. These will soon become one of your favorite Christmas candies! (Read on to learn more about the name!) This recipe is low carb, sugar free, gluten free, and a Trim Healthy Mama S Fuel.

This recipe has been a long time coming, and I have hesitated to post them under the name “Poodle Doodles,” but my family was insistent, so here they are.
I had never heard of Poodle Doodles until after my husband and I were married and I went to a day of Christmas cookie baking with his mom and sisters. Here I learned that these treats were a tradition – and only made at Christmas!
I was a bit horrified when I heard what they called them, but they assured me that they have always called them by that name (at least in their family)!

These delicious little candies were originally called “Chocolate Yummies.” My father-in-law’s grandmother made them at Christmas time, and she of course called them “Chocolate Yummies.” But my father-in-law and his brothers titled them “Poodle Doodles,” because, . . . well . . . because of their shape I suppose. The name stuck – and that is what we still call them all these years later! He did tell me that he remembers his grandma reprimanding him for calling them by that name.
My husband’s family eventually moved from Michigan to Florida, but his grandma would still package up tins of these Christmas candies and ship it to them. They are definitely a nostalgic experience.
The original recipe called for dipping them in chocolate or butterscotch. The butterscotch are my husband’s favorite, and I am working on that. But I haven’t found the right combinations for that flavor yet. So in the meantime, I figured I would give you the chocolate version.
What you call them is completely up to you – I will not be offended if you choose to call them “Chocolate Yummies” instead of “Poodle Doodles.” You could even shape them into balls, bars, or bites! But for my family, we will always use this shape (and name, too, I’m afraid).
So, what do you need for these Poodle Doodles?
½ Cup Butter
½ Cup Peanut Butter
1 Cup Shredded Unsweetened Coconut
½ Cup Finely Chopped Nuts (I used walnuts)
½ Cup Gentle Sweet
¼ Cup Golden Flaxmeal
For the Coating:
½ Cup Trim Healthy Mama Chocolate Chips
2 Teaspoons Melted Coconut Oil

Low Carb Poodle Doodles
Ingredients
- ½ Cup Butter
- ½ Cup Natural Sugar Free Peanut Butter
- 1 Cup Shredded Unsweetened Coconut
- ½ Cup Finely Chopped Nuts (I used walnuts)
- ½ Cup Gentle Sweet
- ¼ Cup Golden Flaxmeal
For the Coating:
- ½ Cup Trim Healthy Mama Chocolate Chips or Lily's Chocolate Chips
- 2 Teaspoons Melted Coconut Oil
Instructions
- In a large bowl, melt butter and peanut butter, then mix well.
- Add coconut, chopped nuts, Gentle Sweet, and flaxmeal, then stir.
- Place in the freezer for 15 minutes to for mixture to become firm enough to form into shapes.
- Remove from freezer and form into 2 inch long rectangles/logs. Place back in the freezer for 10 minutes.
- In a microwave safe bowl, combine chocolate chips and coconut oil, and melt. (I do mine in 30 second increments so I do not scorch the chocolate.)
- Stir chocolate well, then dip each candy into chocolate and roll to coat.
- Place on parchment paper or wax paper, and return to freezer until chocolate hardens. (About 15 minutes or so.)
- Store in refrigerator.

Maybe pecan meal?
Pecan meal would be fine – or you can just up the amounts of coconut and chopped nuts.

Wow! These are so good….I couldn’t stop eating little bites after mixing it together! They are in the freezer now and I will be dipping these in the chocolate in a few minutes! I love when a family comes up with a specific name for a food and it sticks for a lifetime, no matter how crazy it is! That’s what makes food and family so great! Hugs!
Yum! I just made these. I mixed the chocolate chips in the cooled mix and just made patties instead of logs and dipping. So easy and delish!!!

Yes! The original recipe used crunchy peanut butter, and any nut can be subbed for the walnuts.
These look so yummy! But I need to adjust to leave out the nuts (the peanut butter is ok, but the chopped nuts won’t work for me.) could I just use more coconut? If so, do you have any suggestions on how much to add to replace the nuts? Thanks for your wonderful recipes!!
Yes, you can just replace the nuts with an equal amount of coconut.

The original recipe called for powdered sugar.
What is the purpose of the flax meal? Is it just filler and fiber?
The flax meal mimics the graham cracker crumbs in the original recipe. You can omit it and use extra coconut and chopped nuts in its place.
I agree with your family! You have to call them poodle doodles! They sound delicious! What a flavor combo with peanut butter, coconut and chocolate. Yum!

Well to be honest, I have loved everything I’ve tried of yours. What is the purpose for the flax meal? I have it and use it in several recipes. I just wondered about the purpose for these particular sweets!!
In this particular recipe the flax meal mimics the graham cracker crumbs that were in the original recipe. 🙂 I am so glad you liked them!

These were delicious! I don’t have room in my freezer to lay the rolled candy, so i put it in an 8×8 pan…. just put the chocolate on top. They were so good!! But i guess they’re not really “doodles”…. maybe Poodle Bars..?.. 😊Thank you for sharing this amazing candy!!
If I didn’t use lily or thm chips could I just melt 85% chocolate with coconut oil and sweetener? These look so yummy

Hi! Have you ever made these with Super Sweet? I just realized I am out of Gentle sweet:( I know they have the conversion chart, just wondering if you have done it and if the taste is the same.
I have not used Super Sweet in these, but I think it would work fine. I would only use half as much as Gentle Sweet.
Would these be ok for keto? I wasn’t sure about the flax?
Yes, I know keto-ers who use flax.
I do not have gentle sweet. How much pyure would you suggest using?
When using Pyure to replace Gentle Sweet, I usually half the amount.
Have you ever covered them with THM skinny chocolate instead? How would they be storing in fridge or freezer? They look tasty.
I think Skinny Chocolate would work fine, but may melt faster. 🙂
Made these and they are good. Had terrible luck trying to melt Lilly’s choc chips which is all I had. So we enjoyed them without the chocolate. These are a great treat for a sweet tooth and I am thankful for the recipe! May try ordering the other choc chips and see how those go

I’m not sure the caramel sauce would give the same results. You could replace the peanut butter with almond butter, if you have a preference.

I have made these many times, but I used a small cookie scoop and then flattened them before freezing and dipping in chocolate, now this is my favorite way to eat and make these!
For the coating, is it possible that it should have read 2 tablespoons melted Coconut oil instead of teaspoons. We used Lilly chips and 2 t and it was like oreo crumbles, not smooth melted chocolate. ????
I always use 2 Teaspoons, but you can certainly use more. 🙂 Sometimes if you melt the chocolate too quickly (or for too long) it can turn crumbly.
Love these! I have made them a couple of times now and they have saved me this Easter. I can happily much away on yummy choccies without any of the bad side effects of Easter chocolate. I roll mine into very smooth, rounded little logs that end up looking like potato gems. I also use THM friendly dark chocolate cause I can’t easily get the Lily’s choc chips here in Australia and it tastes great! Thanks for a great recipe!
I have been making these for a couple weeks now and have decided that I could make them into bars, so I make the base and push it down into a lined 8 by 8 pan, and then cover it with the chocolate, cut them once they are hardened and keep them in the fridge…soooo good!! Thanks for the recipe!☺
