- 2 Large Granny Smith Apples Or Honeycrisp, Cored And Sliced
- 1 Medium Onion Sliced
- 1 Cup Apple Juice Or Apple Cider (can skip this and use water if desired)
- 2 Tablespoons Brown Sugar Substitute
- 1 Teaspoon Ground Cinnamon
- ½ Teaspoon Salt
- ¼ Teaspoon Black Pepper
- 1 Tablespoon Cornstarch Optional, For Thickening
- 1 Tablespoon Water Optional, For Thickening

Season pork chops with salt and black pepper.
Place the sliced apples and onion in the bottom of the slow cooker.
Lay the pork chops on top of the apple-onion mixture.
In a small bowl, whisk together apple juice, brown sugar, and ground cinnamon. Pour over the pork chops.
Cover and cook on low for 6 hours (or high for 3 hours), until the pork is tender and cooked through.
(Optional) For a thicker sauce, remove the pork chops. Mix cornstarch with water and stir into the slow cooker juices. Cook on high for 5 minutes, until thickened.
Serve the pork chops with the apple-onion mixture spooned over the top—or as a sauce over mashed potatoes.
