Ingredients

  • 4-6 Boneless Or Bone-In Pork Chops About 1 Inch Thick
  • 2 Large Granny Smith Apples Or Honeycrisp, Cored And Sliced
  • 1 Medium Onion Sliced
  • 1 Cup Apple Juice Or Apple Cider (can skip this and use water if desired)
  • 2 Tablespoons Brown Sugar Substitute
  • 1 Teaspoon Ground Cinnamon
  • ½ Teaspoon Salt
  • ¼ Teaspoon Black Pepper
  • 1 Tablespoon Cornstarch Optional, For Thickening
  • 1 Tablespoon Water Optional, For Thickening

Instructions

  • Season pork chops with salt and black pepper.
  • Place the sliced apples and onion in the bottom of the slow cooker.
  • Lay the pork chops on top of the apple-onion mixture.
  • In a small bowl, whisk together apple juice, brown sugar, and ground cinnamon. Pour over the pork chops.
  • Cover and cook on low for 6 hours (or high for 3 hours), until the pork is tender and cooked through.
  • (Optional) For a thicker sauce, remove the pork chops. Mix cornstarch with water and stir into the slow cooker juices. Cook on high for 5 minutes, until thickened.
  • Serve the pork chops with the apple-onion mixture spooned over the top—or as a sauce over mashed potatoes.
