Ingredients

  • 1 Cup Roasted Cashews
  • 1 Cup Roasted Pistachios
  • 1 Cup Roasted Almonds
  • 1 Egg White Only
  • 1 Teaspoon Parsley Flakes
  • ½ Teaspoon Italian Seasoning
  • ½ Teaspoon Garlic Powder
  • Teaspoon Cayenne Pepper
  • Salt To Taste
  • ¼ Cup Parmesan Cheese Grated
  • 1 Package (2.12 Ounce) Parmesan Cheese Crisps
  • 2 Tablespoons Water (Optional)

Instructions

  • Prepare the slow cooker liner by spritzing with nonstick cooking spray.
  • In a large bowl, combine the nuts.
  • In a small bowl, beat the egg white until frothy (add the 2 Tbs. of water if you like). Pour over the nuts and toss to coat.
  • Add the seasonings to the nuts and toss until evenly coated.
  • Place the nuts in the slow cooker, cover, and cook on high for 1 ½ hours, stirring every 15 minutes.
  • Toss the nuts with grated Parmesan cheese and transfer to a rimmed baking sheet covered with parchment or waxed paper. Allow to cool completely.
  • Add the cheese crisps to the nuts and toss to evenly distribute.
  • Store the snack mix in an airtight container for up to 2 weeks.
