A delicious and creamy casserole filled with ham, broccoli, and a burst of flavors. This recipe is low carb, gluten free, and a Trim Healthy Mama "S" fuel.

This casserole is great for an quick and easy week-night meal, but yet it is decadent enough for a more impressive meal. Since I am publishing this two days after Easter, it would be the perfect casserole for using up all that leftover Easter ham!

Creamy Ham Casserole (THM-S, Low Carb, Gluten Free)

When I make this, I usually buy pre-diced ham. (Drive-through Sue here!) I can get this at Walmart for under $4 a package, and it will make one of these casseroles, plus there will be enough leftover for breakfast omelettes.

While this casserole is quite similar to my Cheesy Chicken and Broccoli Casserole, I chose to sub the sour cream for plain Greek Yogurt. This bumps up the protein in the dish, and eases the calories just a bit, while still keeping it delicious and creamy.

There are no special ingredients needed for this dish - you should be able to find all the ingredients at your local Walmart or grocery store.

So, what do you need for this easy dish?

2 Cups Diced Ham

2 14 Ounce Bags Frozen Broccoli

8 oz. Cream Cheese, Softened

1 Cup Plain Greek Yogurt

½ Cup Mayonnaise

1 Teaspoon Garlic Salt

1 Teaspoon Onion Powder

½ Teaspoon Basil

½ Teaspoon Smoked Paprika

¼ Teaspoon Rosemary

¼ Teaspoon Thyme

1 Cup Shredded Cheese

1 Cup Crushed Pork Rinds (optional)

*A note about the pork rinds - I used them in this recipe, and you can see them in the photos. But to be honest, I don't know if I would use them again. They really didn't add much as far as crunch or flavor to the casserole, and I think it would be just as tasty without them! If you want to use them, feel free to, but they are not an essential part of the recipe!

Ingredients

  • 2 Cups Diced Ham
  • 2 14 Ounce Bags Frozen Broccoli
  • 8 oz. Cream Cheese Softened
  • 1 Cup Plain Greek Yogurt
  • ½ Cup Mayonnaise
  • 1 Teaspoon Garlic Salt
  • 1 Teaspoon Onion Powder
  • ½ Teaspoon Basil
  • ½ Teaspoon Smoked Paprika
  • ¼ Teaspoon Rosemary
  • ¼ Teaspoon Thyme
  • 1 Cup Shredded Cheese
  • 1 Cup Crushed Pork Rinds Optional

Instructions

  • Preheat oven to 350.
  • In a large bowl, combine all ingredients except shredded cheese and pork rinds.
  • Pour mixture into a greased 9x13 glass pan.
  • Top with shredded cheese and pork rinds (if using).
  • Bake, uncovered for 45-60 minutes, or until casserole is bubbling and cheese is beginning to brown on top.

Notes

    We don't eat yogurt in our lifestyle; what would you recommend to replace the yogurt? Maybe sour cream?

      Sour cream would work fine, or you could use more mayo.

    I would use the pork rinds after it's out of the oven. I think the melted cheese made them less crispy.

      I had a small amount of liquid in the bottom of my pan - I think it was from the broccoli.

    I would put the pork rinds on TOP of the cheese, after melting. I think they would be more flavorful and far more crunchy. Recipe sounds very tempting as I have the end of a ham in the fridge and all of the other ingredients (except the pork rinds.) May try in next few days.

        I'm going to try this recipe this week but I'm going to thaw & drain the broccoli first. Reading the other comments about the liquid in the bottom, I wonder if this will be the trick! 😁

    This was yummy. I did forget the smoked paprika and basil. I think bc I could not find my rosemary and totally forgot to go back to the ingredient list. I’m definitely making again so I can try it with those things. My broccoli was still pretty hard after an hour so next time I’ll pre-cook it first and drain it- like another poster mine was pretty liquidy and watery on the bottom.

    thanks so much for this recipe. I'm not a huge broccoli fan, but thought it sounded good and easy and I've been following a low carb diet so I decided to give it a shot. Turns out I loved it! and what I like most is that it's so easy to make, and lasts me about 4 days, eating a pretty decent portion for dinner for 4 nights. Love that I just zap it in the microwave and I have a quick and tasty meal. I have steadily been losing weight and I think the automated ease of having the same low carb meal so often. I've made it about 5 times now. Now I double the recipe and freeze one batch for the following week. It turned out pretty much the same as when I make it that day...maybe a little bit more watery, but I just put it in a bowl and sprinkle a little bit more cheese on top to help absorb. (I use cheddar and it's great). I feel good that I'm getting so much broccoli in my diet too. Thanks for the great recipe!

    This was excellent! Since I had lots of fresh cauli, I used that (steamed it first). Loved the smoked paprika, but would leave out the basil and thyme next time. My family at it all up!
