Easy to make with only 5 ingredients, these low carb peanut butter cookies are are keto friendly, sugar free and dairy free, but everyone will love them! These easy low carb peanut butter cookies are also a Trim Healthy Mama S Fuel.

Cookies are generally an easy to make dessert. For most cookies, you simply mix all the ingredients in one bowl, drop onto a pan, and bake in the oven. Easy!

Now granted, there are more involved recipes. Take my Almond Joy Cookies, for example. You have to make the Low Carb Sugar Free Sweetened Condensed Milk before you can make the cookies. So yes, they are a little more involved, but SO WORTH IT!

Can you eat cookies on keto diet?

Oh YES! But you want to make sure you are eating the right kind of cookie! Traditional flours and regular sugar are out, but there are so many healthy options for low carb cookies!

Start by switching out your flour - you may be wondering which flour is low carb? Traditional white flour and wheat flour are not low carb, but almond flour, coconut flour, and flax meal can all work as low carb flours.

In this particular low carb peanut butter cookie recipe I chose to use the Trim Healthy Mama Baking Blend, which is a pre-mixed blend of low carb flours. (You can make your own baking blend with this recipe.) 

Or, if you do not have access to the Trim Healthy Mama Baking Blend, you can simply mix together equal parts of almond flour, coconut flour, and flax meal and use that as a replacement for the blend (Trim Healthy Mamas, keep in mind that this blend of flours will always be an S fuel, not FP).

However, these Low Carb Peanut Butter Cookies are about as easy as it gets! Honestly, dump, mix, drop, bake! It really is that simple.

Only five ingredients and you can have delicious peanut butter cookies in less than 20 minutes!

What is the best low carb peanut butter?

I have only tried these cookies with Adams Natural No Stir Peanut Butter. This is my all-time favorite brand of natural peanut butter. There is absolutely NO oil separation, and it is ready to eat straight out of the jar. (Don’t ask me how I know that!)


The Adams brand of peanut butter in the West is the same as the Smuckers brand in the East. So if you do not find Adams brand, perhaps you could look for Smuckers. I buy Adams Natural Peanut Butter at my local Walmart, and I truly believe it is the best low carb peanut butter!

Is Peanut Butter Allowed on Low Carb Diet?

Absolutely - 1 cup of peanuts has approximately 24 carbs, but 12 grams of fiber, so an entire cup of peanuts only has 12 net carbs.

This makes peanut butter a great option for low carb cookies.

What Peanut Butter can you have on Keto?

You can enjoy pretty much any peanut butter, as long as there is no added sugar. Most commercial peanut butters have added sugar, so those are off limits.

You want to look for a peanut butter that says “natural” and be sure to check the ingredient list.

Can you use PB2 in place of Peanut Butter?

This is an often-asked question, and in many recipes, you can reduce the amount of calories by using a pb powder to replace the peanut butter. 

However, the problem with PB2 powder is that it contains sugar, so it is still off-limits for Trim Healthy Mamas, low-carbers and keto.

The best powdered peanut butter I have tried is from Trim Healthy Mama, and that is the brand of defatted peanut flour I use most often. It is pure peanut flour - no added fillers, and no added sugar or sweeteners!

I like to mix it with a little water, salt and sweetener for a peanut butter powder drizzle on pancakes!

However, you cannot replace the peanut butter in this recipe with any type of peanut flour - it will not work for this particular recipe.

Many years ago my sister-in-law told me about a cookie recipe that used 1 cup peanut butter, 1 cup sugar, and 1 egg. The cookies were delicious, and full of peanut flavor.

I tried just converting that straight across to make it low carb, but I was not pleased with the results. First they ran all over the place and pretty much disintegrated. Then they turned grainy.

Finally after quite a few trials and errors, I settled on the combination of ingredients you see below in the recipe. The Trim Healthy Mama Baking Blend gives them a bit more body and helps to keep them soft.

If you wanted to, you could even roll the dough balls in erythritol or xylitol before placing them on the pan. That would give more of the traditional “sugary” look to the cookies. (I omitted that step and still enjoyed them thoroughly.)

And while we are talking about peanut butter cookie dough, you’ll want to make sure that you give this Edible Peanut Butter Cookie Dough a try! It just takes a couple of minutes to make a single-serve cookie dough snack!

This recipe gives you a generous 15 cookies, but if you want to make a double batch, I believe they would freeze well! In the back of my mind I keep thinking I will batch cook a bunch of Trim Healthy Mama desserts and stockpile them in the freezer. So far, . . . that hasn’t happened! Ha!

    How do you make Low Carb Peanut Butter Cookies?

    First of all, you want to preheat your oven to 350.

    Then, grab your favorite mixing bowl, and cream together the peanut butter and egg. (A room temperature egg will always work best in baking.)

    Then add in the Gentle Sweet, Baking Blend and vanilla and mix until the ingredients are well combined. If you do not have access to Gentle Sweet, you can use my Low Carb Powdered Sugar in equal amounts as a substitute.

    Using a small cookie scoop (or a spoon, but I love my cookie scoop), portion the dough into small balls and roll them in your hands until they are smooth.

    Next, you can decide if you want to roll the peanut butter cookie dough in a granulated low-carb sweetener or not. Rolling them in the sweetener gives this keto peanut butter cookie recipe a traditional look.

    Place the balls of peanut butter cookie dough onto your prepared baking sheet, then make a criss-cross pattern on top of each cookie using the tines of a fork.

    (Ever wonder why we add that distinctive fork tine mark to peanut butter cookies? The peanut butter makes these cookies more dense than normal cookies, so they need to be flattened in order to bake evenly. You could easily press the dough down with the bottom of a drinking glass as well, but the fork marks are prettier!)

    These cookies will be quite soft when they first come out of the oven, so you will want to allow them to cool completely before trying to move them from the pan, or they may fall apart. (In which case you can crumble them into a bowl, pour unsweetened almond milk over them and enjoy peanut butter crumble cereal! YUM!)

    Instructions

    1. Preheat oven to 350.
    2. In a medium mixing bowl, cream peanut butter and egg.
    3. Add Gentle Sweet, Baking Blend and Vanilla and mix well.
    4. Using a small cookie scoop, scoop dough into your hand and roll into a ball.
    5. Place balls on prepared cookie sheet (sprayed with coconut oil or use a silicone mat).
    6. Using a fork, press cookie dough down, making a criss-cross pattern on top.
    7. Bake for 8 minutes, and allow to cool completely.

    Notes

    If you do not have the Trim Healthy Mama Baking Blend, you can mix your own blend with equal parts almond flour, coconut flour, and flax meal.

    If you do not have Gentle Sweet, you can use the same amount of my Low Carb Powdered Sugar.
