I recently bought an ice cream maker, (Cuisinart ICE-20 Automatic 1-½-Quart Ice Cream Maker, White ) and I must say it was a life-changing experience! The one I purchased was one of the newer ones – no salt or ice required, and my ice cream is ready in about 20 minutes! Now that’s what I’m talking about – creamy, delicious, guilt free ice cream in less than half an hour? Count me in!
When I was trying to find ice cream recipes, I kept seeing instructions like “refrigerate for four hours” or “place in refrigerator overnight.” I told my husband, “I can’t wait four hours for ice cream! I need some now!” (I know, I know, call me impatient if you must!)
Many low carb ice creams rely on cottage cheese and almond milk – and while those variations are good, I wanted a “real” ice cream texture and mouth feel. So, I headed to the kitchen, did some experimentation, and came up with this amazing recipe. I couldn’t believe it when I tasted it – it tastes like “real” (read sugar-laden) ice cream! I was in love!

Is there truly such a thing as a low carb ice cream recipe?
Absolutely! This sugar free ice cream recipe is proof of that! While it's not entirely possible to get it carb free, this recipe shows just how simple (and tasty!) it can be to take out and remove some of those added carbs. If you've always wanted to have your dessert and eat it too, this low sugar vanilla ice cream recipe totally allows that to happen!
Sugar Free Vanilla Ice Cream Recipe
{THM-S, Low Carb, Gluten Free, Sugar Free, Grain Free}
Recipe:
- 1 Cup cottage cheese
- ¼ Cup Half & Half
- ½ Cup THM Gentle Sweet
- 1 Tbl vanilla
- Add 1 ½ cups Heavy whipping cream
- 1 Tbl vegetable glycerin (optional – helps keep it “scoop-able”)
In a blender, blend the cottage cheese and half & half until completely smooth. This step is very important – nobody wants cottage cheese lumps in their ice cream – Gross! Add remaining ingredients and process until smooth. Pour into your ice cream maker and process according to manufacturers instructions (mine only took about 25 minutes). Transfer to a freezer safe container and keep airtight in the freezer. If you do not add the vegetable glycerin, you will want to set the ice cream on the counter for a few minutes to soften.

This low carb, sugar free vanilla ice cream is so delicious!
Ingredients
- 1 Cup cottage cheese

I see so many recipes with gentle sweet or the other one i can't remember.. But i can't use xylitol because of my puppies... Anything i can do when i need to substitute this sweetener?

You could use THM Super Sweet Blend or Pyure (found at Walmart), but cut the amount in half and taste as you go to get the correct sweetness.

Yes, I usually do, but any kind should work in this recipe (low fat or full fat).

So Gentle Sweet is just xylitol? I have xylitol, in both granular and powdered form - which should I use?

Gentle Sweet is a blend of xylitol, erythritol, and stevia. If you have powdered xylitol, I would use that. You may want to taste and adjust the sweetness (if needed) as you go.

Could you use non fat or full fat plain yogurt? I usually make my own yogurt so this is an easier and more cost effective option for me.

Oh man! Thanks for this amazing recipe! I love the chocolate ice cream recipe too! I made this after I ate breakfast this morning and added a cup and a half of frozen strawberries! My husband was using a long handle ice tea spoon to get what was left in the blender! I really love ice cream but can't have sugar and the sugar free ice cream in the stores has too many carbs and makes my blood sugar go up! My blood sugar remains stable when I eat this! Even when I eat waaaaay too much! You rock! Hugs!

Love this recipe. The second time I made this recipe I added THM Skinny Chocolate "chips" and it was amazing. I made a batch of skinny chocolate and froze a portion of it in a honeycomb silicone trivet, popped out the "chips" and added them to the ice cream machine with 5 minutes left.

Oh my goodness! This recipe is so delicious. I made it tonight for the first time, knowing that I hate cottage cheese, so I have been putting it off for a few days. However, when I tasted this batch of ice cream, I nearly fell on the floor. It was just so creamy and tasty and out of this world! And I can't taste any of the cottage cheese in it. And I'm not telling anyone in my family that it's in there, or they'll just scoff at it and refuse to even try it (they'll forgive me after they taste it).
I did add 2 extra Tbsp of vanilla and an extra Tbsp of vegetable glycerine, and instead of gentle sweet, I used one whole cup of swerve confectioners sweetener. Other than that, I made the recipe exactly as written.
I actually doubled the recipe, and got 4 pints (or for those of us who are math challenged, that is about 2 quarts or 2 liters) of ice cream out of that. One of those pints I left as plain vanilla. The other 3 pints I added in some low carb chocolate mint fudge cubes that I had messed up from a previous recipe (I subbed Vitafiber syrup for the called for powdered sweetener, and this changed the consistency to more of a truffle than a fudge), which changed my vanilla ice cream to mint chocolate fudge chunk ice cream. Mint chocolate chip ice cream has always been my favorite until today. Now THIS recipe is my favorite ice cream! I'm already planning to make my mother some butter pecan ice cream from this basic recipe, and have an idea to make my nephew a healthy version of Friendly's Cotton Candy ice cream (his favorite flavor, which makes me cringe every time he eats it because that just cannot be safe for human consumption).
I am so happy to have tried this recipe and can't wait to eat more healthy ice cream that ACTUALLY TASTES like ice cream and not some kind of science experiment. Truly, if I didn't make it myself to know that it is so healthy, I would have sworn that it was Breyer's or something!

I made this for my husband’s birthday. It was delicious. It is slightly too sweet for my taste though and next time I make it, I might try reducing the sweeter by a few tablespoons. (I used the gentle sweet that doesn’t contain xylitol.) Do you think that could have been why? Anyway, this recipe has the best consistency of any of the low carb ice cream that I have ever had! Great recipe!
