Smoky Deviled Eggs

Smoky Deviled Eggs (Low Carb, THM-S) #trimhealthymama #thm #thms #deviledeggs #smokydeviledeggs #glutenfree #sugarfree #lowcarb #dairyfree #keto #mymontanakitchen

Rich deviled eggs with a cool and creamy center and a delicious smoky flavor. These smoky deviled eggs are low carb, sugar-free, gluten-free, dairy free, and a Trim Healthy Mama S Fuel.

Deviled eggs are one of my favorite grab-and-go snacks. For one thing, they are instant protein. One serving of these (2 halves) has 6 grams of protein. I even like to add them to the side of my salad when I don’t have enough protein on my salad.

See just how easy these are to make by watching my how-to video below!

I got to wondering where the term “deviled” originated. (I have a friend who calls them Angel eggs, instead.)

Upon consulting with my trusty friend, Google, I discovered that the term “deviled” referred to something spicy or hot.

“The term "deviled", in reference to food, was in use in the 18th century, with the first known print reference appearing in 1786.” (See source here)

Some parts of the world call them “stuffed eggs.” I suppose it really doesn’t matter what you call them, as long as they are delicious!

Many of you know that my husband and I work as boys dorm parents at a school for Native Americans. One of my dorm boys in particular LOVES deviled eggs - they are an easy source of protein, so I don’t mind sharing!

Depending where you live, these can be an inexpensive protein option as well. Unfortunately, where I live in Montana we are paying about $1.88 per dozen. But in Ohio, where my Mom lives, she was recently paying less than $.30 a dozen! We just purchased our own chickens, and they should begin laying in a few weeks - I’m so excited to have my own egg source!

The smoky flavor idea came from my husband. He loves deviled eggs as well, but he also loves anything “smoked.” Smoked cheese, smoked meat, etc. The smoke flavor in these smoky deviled eggs comes from both the smoked paprika and the liquid smoke.

I used my Instant Pot to boil/steam the eggs. This is one of my favorite ways to use my Instant Pot!

I’m hoping to have a post soon devoted to how to do boiled eggs using my IP. If you have ever had a hard time peeling eggs, you need to be on the lookout for that post. IP eggs are SO easy to peel!

So, what do you need for these Smoky Deviled Eggs?

12 Boiled Eggs

½ Cup Mayonnaise

½ Teaspoon Onion Powder

½ Teaspoon Garlic Powder

½ Teaspoon Salt

¼ Teaspoon Smoked Paprika

½ Teaspoon Liquid Smoke

Ingredients

  • 12 Boiled Eggs
  • ½ Cup Mayonnaise
  • ½ Teaspoon Onion Powder
  • ½ Teaspoon Garlic Powder
  • ½ Teaspoon Salt
  • ¼ Teaspoon Smoked Paprika
  • ½ Teaspoon Liquid Smoke

Instructions

  • Halve boiled eggs lengthwise and remove yolk.
  • When all yolks are removed, add remaining ingredients to the yolks and mix well. (I used my hand mixer.)
  • Put yolk mixture into a piping bag and pipe into centers of egg whites. (See note below.)
  • Sprinkle with additional smoked paprika and with parsley, if desired.

Notes

If you do not have a pastry bag or pastry tips, you can simply snip off the corner of a Ziploc bag and use that to pipe the filling.
(Or if you do not care about piping, simply fill them with a spoon!)
You can use regular paprika for this recipe, but I highly recommend the smoked paprika.
