I made this Spiced Sweet Potato recipe one day when I was trying to figure out a way to use up my sweet potatoes before they went bad.
I love sweet potatoes, but I often forget about them! No idea why, but I will buy them and then they sit in my pantry! Sad, I know.
I recently did a Trim Healthy Mama Fuel Cycle and found that I like to eat cooked sweet potatoes cold. Truly! I just held it in my hand like a candy bar and ate it. It was so good, and an easy snack. (You could add some collagen tea on the side for protein.)
Sweet potatoes are full of healthy nutrients. One medium cooked sweet potato has 438% of your daily recommended dose of Vitamin A. Sweet potatoes are also a good source of Vitamin C and Vitamin B6.
You really can switch this recipe up however you want. The first time I made this Spiced Sweet Potato recipe, I did not peel the potatoes (I just washed them thoroughly). The second time I did peel them. Totally up to you!
If you are not fond of chili powder and cumin, you could sprinkle them with a little bit of sweetener and cinnamon. That would be just as delicious (and more like dessert)!
Serve this Spiced Sweet Potato recipe with grilled chicken breast and steamed vegetables for a healthy, filling Trim Healthy Mama E Meal! This recipe only makes 2 servings (it uses two sweet potatoes), but if you want more feel free to double the recipe!
I find that when I begin incorporating more E meals into my Trim Healthy Mama Eating plan, I begin craving them more and more! See all of my E Fuel Recipes - be sure to check out my Egg White Oatmeal for a delicious & nutritious breakfast!

Thank you for sharing this recipe and for adding pictures. I have to say that I have not been known for indulging in sweet potatoes. However,at least one of the pictures you have added may have made me want to try this recipe. I wonder how much more delicious these spice sweet potatoes become when they are cold. Thank you for the note about the vitamin A content, I was unaware of it.
