Macaroni salad speaks of summer to me. It's a staple at picnics, church potlucks, and family reunions. Now that you're a Trim Healthy Mama, you may have thought macaroni salad was only in your past, but (purists close your eyes and ears) I'm here to tell you it doesn't have to be - thanks to this beautiful little pasta in the black box (aka Dreamfields).
Now, that being said, you should know that Dreamfields pasta is considered a "personal choice" item - it is certainly not necessary to use, but for some people it helps them stay "on plan" when they have a traditional-tasting pasta to use. It is only recommended by the sisters that you eat it once a week at the most. I probably don't even have it that often - maybe every two weeks, and my family has done fine with it.
The Dreamfields company has processed their pasta in a patented manner, where the majority of the carbs are "protected" (not digested as carbs by your body). There was a lot of hoopla concerning Dreamfields over the last couple of years, causing them to change the information on their packaging, so you will not see a net carb count on their nutrition label. It is recommended that you observe your own personal response to the pasta (Does it raise your blood sugar? Does it make you crave carbs?) and make your own personal decision. Now, on to the recipe! This macaroni salad is bursting with flavor, contains a variety of vegetables, and is totally customizable to your tastes. Like tomatoes in your macaroni salad? Add a handful! Like hard boiled eggs? Toss a couple in! Don't care for onion? Leave it out!
THM-Friendly Macaroni Salad {THM-S}
- 1 box Dreamfields elbow macaroni, cooked according to package directions
- 2 stalks celery, chopped
- ½ large red bell pepper, diced
- 1 cucumber, diced
- ½ medium onion, diced
- 1 cup mayonnaise
- 1 Tbs white vinegar
- 1 doonk stevia (optional)
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 2 teaspoon dried parsley
- 2 teaspoon Alpine Touch seasoning (this is a local spice blend I find in Montana - you could use your favorite all-purpose seasoning here)
Directions:
- Cook macaroni according to package directions - be sure not to overcook!
- Meanwhile, blend mayonnaise, stevia (if using), vinegar and spices together.
- Chop/dice vegetables and add to mayonnaise mixture.
- Add drained macaroni to the mayonnaise/vegetable mixture and stir well.
- Refrigerate until serving.
Please note that you should try to keep portions to the recommended serving size, which in this case would be ½-1 cup.
This is a great salad to take to a cookout or get-together. It's something everyone can enjoy without even knowing it is a healthier option! (Wink, wink)
