Preheat the Air Fryer: Set your air fryer to 380°F.
Prepare the Chicken: In a bowl, toss the chicken pieces with olive oil, garlic powder, ground ginger, salt, and pepper until well coated.
Cook the Chicken: Arrange the chicken in the air fryer basket in a single layer. Air fry the chicken for 12–15 minutes, shaking the basket halfway through, until the chicken reaches an internal temperature of 165°F.
Make the Teriyaki Sauce: While the chicken is cooked in an air fryer, combine soy sauce, honey, brown sugar, rice vinegar, sesame oil, garlic, and ginger in a small saucepan. Bring to a simmer over medium heat. Stir in the cornstarch mixture and cook until thickened (about 2–3 minutes).
Toss and Serve: Remove the chicken from the air fryer and toss it in the teriyaki sauce until evenly coated.
Garnish and Enjoy: Sprinkle with sliced green onions and sesame seeds, if desired. Serve with rice or vegetables.
