I have discussed with you before the difficulties I have with breakfast. I’m not a big eater in the morning, and more often than not I can’t think of anything that sounds good. I have been using blueberries (less than 1/2 cup) to make the sauce, then I simply top it off with this granola. It is delicious, and easy!
My first introduction to low carb granola was from one of my blogging buddies (check out her granola recipe here). I recently purchased some organic pecan pieces, and I knew I wanted to use them in a granola recipe!
It is super easy to make, and I love to have it on hand for topping yogurt in the morning or ice cream for dessert. I even took some with me this week when we went away for the weekend!
