I understand this is not a genius "recipe." In fact, very likely, it is something you already enjoy! But I thought it was worth mentioning.

Sometimes you just want a crispy grilled sandwich. And sometimes you just want a peanut butter and jelly sandwich! Why not combine the two?

Grilled Peanut Butter and Jelly Sandwich (THM-E, Low Fat)

If you are a Trim Healthy Mama, you know that we do not combine fuels (we separate healthy carbs and fat). This would normally mean that a peanut butter and jelly sandwich puts you in Crossover mode. Enter . . . Peanut Flour! I love this product! I can add peanut butter flavor to so many things without adding a significant amount of fat! By using peanut flour, we are able to keep this sandwich as a solid "E" fuel. (If you are confused by all these abbreviations and terms, please click here to find out more about Trim Healthy Mama.)

You can use different flavors of jam for different flavor combos, but my favorite is strawberry! If you are unsure what brand of jam is on plan, here is a photo for your reference. I always use the Polaner brand. You can purchase this through Amazon by clicking the photo below, but I always buy mine at Walmart.

So, what do you need for this tasty sandwich?

2 Pieces Sprouted Bread

2 Tablespoons Peanut Flour

1 Tablespoon Water

1 "Doonk" Stevia Extract

2 Teaspoons Polaner Jam

Mix the peanut flour, water, and stevia until you have a "peanut butter." Spread peanut butter mixture on one slice of bread, and the jam on the second slice of bread. Place bread together and fry in a non-stick pan for about 3 minutes per side, or until well toasted.

Notes

If you do not have the THM Peanut Flour, you can use JIF Peanut Powder that is found at most local Walmart stores. I linked to the Polaner Jam above to give you an idea of what it looks like, but usually you can find that at Walmart as well. I buy my Silver Hills Sprouted Bread at Natural Grocers, but feel free to use your favorite brand of sprouted bread.
