Why is it called refined coconut oil?

Refined coconut oil is more processed than "virgin" coconut oil, but it still does have health benefits. I like to use refined so there is no coconut flavor in recipes like this baked chicken. (But if you enjoy coconut flavor, go ahead and use the virgin coconut oil!)

To "refine" the coconut oil, the coconuts are baked prior to extracting the oil. Then the oil is "bleached" (not with a chemical, this simply refers to the process in which the oil is passed through a bleaching clay for extra filtration to remove microbes and any insects and dirt).

The coconut oil in this recipe is used to ensure your everything seasoning sticks fully to that chicken breast before you place it in the oven.

    1 Tablespoons white sesame seeds

    1 Tablespoons black sesame seeds

    1 Tablespoons + 1 teaspoon dried minced onion

    1 Tablespoons + 1 teaspoon dried minced garlic 

    ½ Tablespoon course salt

    Simply add all of these ingredients together in a jar and you have your ready-made spice blend!

    Juicy and tender baked chicken with an everything bagel seasoning crust!

    Instructions

    1.  Preheat your oven to 375 degree and grease a baking pan with a tablespoon of Refined Coconut Oil
    2. Scoop a few tablespoons of the everything bagel seasoning in a bowl.
    3. Brush the top of the chicken with refined coconut oil.
    4. Place the top of each chicken breast into the bowl, shake off any excess and place into your baking pan, seasoning side face up. 
    5. Bake for 30 minutes or until the chicken is no longer pink in the center.
