A rich, fudgy brownie, topped with a cream cheese layer, decadent chocolate pudding, and topped with a generous amount of homemade whipped cream.
I am so excited to give you this recipe! You see, brownie delight is one of my all-time favorite desserts. I have wanted to THM-ify it for months, but I've held off because I could never get the brownie part right. I am a brownie snob. I know, it sounds horrible, but its true! My husband kept telling me I was striving for something I would never find, and I was beginning to think he was correct! None of the brownies I tried (or tried to create) were "perfect."
Last week I got a text from my sister-in-law telling me she had finally found an excellent THM brownie. I immediately went to the kitchen and made them. And yes, it was THE brownie. Perfect! Fudgy. Dense. Chocolatey. I didn't even have to wait until they had sat in the fridge overnight - they were excellent right away! Don't you want to make them? Of course! (You can use any low-carb brownie recipe for this dish, but I would highly recommend Theresa's Gooey Brownies.)
Then I started dreaming about brownie delight! The next day, I was back in the kitchen, working on the recipe. And it turned out perfect. My husband laughed at me when I told him it was the fulfillment of all my brownie delight dreams. Ha! But seriously, it tastes just as good (if not better) than the regular, sugar-laden version. Friends and family would never know they were eating "on-plan."
This is definitely a Heavy S fuel, so you don't want to eat it every day. It would best be reserved for special occasions. It is very rich, so just a small piece will satisfy!

Best Brownie Delight {THM-S, Low Carb, Sugar Free}
Ingredients
- 1 Recipe Theresa's Gooey Brownies or your favorite low-carb brownie recipe
Cream Cheese Layer
- 1 8 Ounce Block Cream Cheese softened
- 1 Cup Heavy Whipping Cream
- 3 Tablespoons Gentle Sweet
Chocolate Pudding Layer
- 1 Can Full Fat Coconut Milk
- ¼ Cup Cocoa Powder
- ⅓ Cup Gentle Sweet
- 1 Teaspoon Vanilla Extract
- ¼ Cup Water
- 2 Teaspoons Gelatin Just Gelatin or Knox
Homemade Whipped Topping
- 1 Cup Heavy Whipping Cream
- 3-4 Tablespoons Gentle Sweet
Instructions
- Make Theresa's Gooey Brownies (or your favorite low-carb brownie recipe) I split the batter between two 8x8 pans and baked for about 20 minutes or so. You will only need one 8x8 pan of brownies for the remainder of this recipe. Cut the other pan into squares and freeze for later use!
Chocolate Pudding
- Combine canned coconut milk, cocoa powder, Gentle Sweet, and vanilla in a medium saucepan.
- Heat over medium heat, until warm and all ingredients are combined. (Whisk well with a whisk to prevent clumps.)
- Remove from heat.
- Sprinkle 2 Teaspoons of Gelatin over ¼ cup water and let sit for about 1 minute. Stir, then add to pudding mixture and mix well.
- Pour pudding into a shallow container.
- Place in the refrigerator to cool and thicken.
Cream Cheese Layer
- Beat softened cream cheese with heavy whipping cream and Gentle Sweet until well combined.
Homemade Whipped Topping
- Beat heavy whipping cream with Gentle Sweet until stiff peaks form. (About 2-3 minutes)
Assembling the dessert
- Spread cream cheese layer over cooled brownies.
- Pour slightly thickened pudding over the cream cheese layer, and put back in the refrigerator for 30 minutes or so.
- Spread whipped cream on top of pudding layer just before serving.

This looks great! Do you think you could use almond mik or heavy cream for the pudding layer? I'm not a fan of coconut milk, since I don't like coconut flavor.

Perhaps you could use heavy cream, but probably not almond milk. You actually can't even taste the coconut, though. ?

This is the REAL DEAL chocolate dessert. I made a THM Texas Sheet Cake the other day and I was not happy with the results, the cake was just not sweet enough and too dry. Then I saw YOUR recipe on the facebook page. I thought it might work using the sheet cake as a base. I had a little trouble getting my pudding to set (old gelatin?) But wow, wow, wow is this dessert a winner. This satisfies that "I gotta have a huge bowl of chocolate ice cream with fudge and cool whip on top" craving.

I am currently making all the layers. How long should the pudding take to set up? I have had it in the fridge for a few hours, it is cooled but still very soupy. Does it need to wait overnight? I thought maybe the fat in the coconut milk might help it set up? Can I add more gelatin if needed? Thanks, it looks amazing!

I let mine set overnight for the best results. If you add more gelatin, you would probably want to heat the pudding mixture again.

does anyone have any tips with getting the pudding layer to set up? I tried Great Lakes Gelatin 1 1/4 tsp and it was runny, then heated up the pudding mixture again and tried again using 1 1/4 tsp of the Great Lakes and let it sit over night and it was still runny so I used a whole envelope of knox and it set a little but used it anyway. It still tasted fine but not sure what to do to get it right. First time ever using Gelatin so any hints would be welcomed 😉

There are differences between brands of gelatin. Last time I made it, I used 2 teaspoons of gelatin, and it set faster, but it still takes a while to set.

I made this yesterday and was very precise on using exact ingredients and measurements (I’ve not had the greatest success with desserts tasting sweet enough or they are bitter.)
This came out looking so delicious and the pudding set up great. However, when we tried it today, it doesn’t seem sweet at all. Textures and chocolate flavor are there, but not sweet. I just revisited the blog to make sure I wasn’t supposed to add a donk of Stevia or something. I
I didn’t rad your comment about only using half the brownies until too late. Well, after adding pudding layer, it was filled to the brim, so I decided to add whip cream as served. I mention this because I thought since pudding layer on top I sprinkled Lakanto powdered sugar all over the top hoping it will dissolve into the pudding and make dessert sweeter. (This brand has pure Monk and Erythritol).
Anyway, I will make this again but wondered if we just have a palette that needs more sweetness. I love and crave sweets. Thinking next time I’ll add more sweetener. Do you have suggestion on how much more? I have Gentle Sweet, Super Sweet, Pyure and Pure Monk.

Also, I love the pudding ... using gelatin vs glucci or Xanthan gum. Wonderful, creamy and chocolaty!

You could add another tablespoon or two of Gentle Sweet to the pudding if you would like it to be sweeter. 🙂

I wondered if the type of Gentle Sweet mattered. I use the Xylitol free and I know Xylitol is very sweet. If you use the type with Xylitol I may need to adjust amounts in all sections. Love, love the pudding...could make it alone for dessert! Thank you!

I have never used the xylitol free Gentle Sweet, so I am not sure how it measures. I'm glad you liked the pudding! Brownie Delight is my FAVORITE dessert!

I literally jumped for joy when I found your recipe. It is awesome!!!!! I love this dessert with sugar and was missing it so much! I used super sweet for the pudding because I was almost out of gentle sweet and will not do that again, I think the gentle is the best tasting. Thank you!!!!
