A healthy make-over of my Mom's famous strawberry pie. A sugar cookie crust topped with a luscious cream cheese layer and topped with piles of strawberries. This recipe is low carb, sugar free, and a Trim Healthy Mama S Fuel.

Growing up, our family always looked forward to strawberry season. That meant Mama would be making her delicious strawberry pies. Did we fight over the last piece? Well, I don't know if we need to have that discussion. But I will tell you that my family had some arguing over the last pieces of the make-over pie!

Mom's Famous Strawberry Pie (THM-S, Low Carb, Sugar Free)

I will warn you. You may want to double the recipe to make TWO pies instead of just one. Every time I have made this it has disappeared within HOURS! Truly!

My Mom's original recipe used a traditional pie crust, a cream cheese and cool whip layer, topped with sliced strawberries and red strawberry glaze. I tried to re-create the glaze by using gelatin to make a glaze, but it didn't work so well. I actually prefer to just use sliced fresh strawberries (and its less steps and fewer ingredients)! That sounds like a winner to me!

Mom's Famous Strawberry Pie (THM-S, Low Carb, Sugar Free)

So, what do you need for this delicious pie?

  • Crust

1/4 Cup Melted Butter

3 Tablespoons Water

1/2 Cup + 1 Tablespoon Baking Blend

1 Tablespoon Gentle Sweet (Or your favorite powdered sweetener)

  • Filling

8 oz Softened Cream Cheese

2 Tablespoons Gentle Sweet (Or your favorite powdered sweetener)

1/2 Cup Heavy Whipping Cream

2 Cups Fresh Sliced Strawberries

If you do not have the THM Baking Blend, you can use an equal mix of coconut flour, almond flour, and flax meal.

*Crust*

  • 1/4 Cup Melted Butter

  • 1 Tablespoon Gentle Sweet Or your favorite powdered sweetener
  • 3 Tablespoons Water

*Filling*

  • Refrigerate for at least 2 hours before serving.
  • Slice into 8 pieces and serve.

Notes

If you do not have the THM Baking Blend, you can use an equal mix of coconut flour, almond flour, and flax meal.

I have half and half...no heavy cream...is the heavy cream necessary or can the half and half be used?

The heavy cream stiffens and mimics the cool whip. Half and half will not do that. However, you could beat the softened cream cheese and add just 1 or 2 Tablespoons of half and half to thin it a bit, and I think it would still be delicious! 🙂

When I was growing up my mom had strawberry plants growing in her garden. More often than not, the bunnies shoplifted the majority of the berries but that didn't stop us from anticipating strawberry season. This is such a beautiful pie and I bet your mom is proud of your remake of it.

    Hey Sarah!
Thank you for a yummy recipe! I showed the recipe to my spouse and said we need to find the pie pan! We couldn't find it! (All of our kitchen stuff is in boxes! Still no kitchen!) Finally I said, "I'm going to go buy one! Plus we need strawberries!" Well, we doubled the recipe and put it all in one pie pan and shared it! Tell your mom her pie, the healthy version is famous in Virginia Beach! Hugs! Sharon

Is the crust supposed to be soft still after baking? Thank you for the recipe...can't wait til it is ready to eat!

I made this yesterday and we had it for desert after dinner... We're a small family of 4 and ate a little over half of the pie... Oops! Hubby and I finished it off for with lunch today... He said it tasted like it "almost wasn't trim" which is what he calls all the thm recipes! So Score!!! A sugar free dessert he won't moan about!

This looks great. Have you ever made it with some of the strawberries mixed in the filling. I"m thinking that may work. Will have to give it a try. Thanks for the recipe. First time at your site. Signing up for your emails. Came to site because someone referenced your strawberry cake which I will also try.

Awesome! Welcome, Margo! I have not made it with strawberries in the filling, but I think that would be awesome!

Hi, I live in Wales and love your recipes, especially sugar free desserts as I am diabetic. What is baking blend? I don't think we have it in the UK. Is it what we'd call self raising flour?

No, the Baking Blend is a low carb flour alternative made with a number of low-carb flours and ingredients. It has no regular flour in it. You could alternatively use an almond flour crust.

I grew up with a very similar recipe. It was always a family favorite. We also made a version with peaches and a mashed peach glaze. I am looking forward to trying your THMified pie! T
