Then, you prepare your salmon on a baking sheet and coat the sauce on top before sticking it in the oven.
From there, you just need to make your cauliflower rice to go with the pesto salmon!

Ingredients
Salmon
- 1 ½ Pounds Salmon, cut into 4 slices
- 1 Cup Fresh Whole Basil Leaves
- ⅓ Cup Parmesan Cheese, Grated
- 2 Teaspoons Garlic, Minced
- 5 Tablespoons Olive Oil
- ¼ Cup Whole Pine Nuts
- Salt and Pepper, to taste
Rice
- 3 Cups Cauliflower Rice
- 2 Tablespoons Butter, Unsalted
- 4 Tablespoons Parmesan Cheese
- 2-3 Tablespoons Fresh Parsley, Chopped
Instructions
- Preheat the oven to 400 degrees.
- Place the basil leaves, olive oil, parmesan cheese, garlic, and pine nuts into a food processor or blender; blend until smooth. Add salt and pepper, to taste.
- Cut the salmon into 4 fillets and place a thick layer of pesto on top of each one.
- Place the salmon fillets on a greased baking sheet and bake in the oven for 12-14 minutes.
- While the salmon is baking, cook the cauliflower rice until you reach your desired texture.
- Add the butter, parmesan cheese, and parsley to the rice and stir to combine.
- Serve the baked pesto salmon on a bed of rice and enjoy!
