2 Ingredient Dairy Free Sweetened Condensed Milk {THM-S, Sugar Free, Low Carb}

A sweet and creamy Sweetened Condensed milk that is both dairy and sugar free! And . . . it's only two ingredients!

2 Ingredient Dairy Free Sweetened Condensed Milk (THM-S, Sugar Free, Low Carb)

Ok, it is confession time! Some of you may have tried my Sugar-Free Keto Sweetened Condensed Milk, and while it does taste pretty amazing, I'm now realizing how much of a calorie bomb it is! As part of my New Years Resolutions, I have been trying to cut back a bit on heavy S intake, eat more leafy greens and okra, and journal my food choices with more regularity.

Several people have asked for a dairy free option to replace the sweetened condensed milk, and this 2 Ingredient recipe fits the bill. But I digress . . . we were discussing the calorie count of the original sweetened condensed milk. I used 2 cups of heavy cream in the original - which is a whopping 1,920 calories in itself. Add 2 Tablespoons of butter, and you are over 2,000 calories! Yikes!

Now, to make the milk you have to "condense" it, or let it boil until it reduces. Sadly, those calories do NOT evaporate, but they condense right along with the heavy cream. In the end, you have roughly 1-1 ¼ cups of condensed "milk." Assuming you end up with 1 ¼ cups, this delightful delicacy has over 100 calories per Tablespoon. No wonder I wasn't losing any weight around Christmas! I was treating this "treat" as a staple.

Now, please don't get me wrong - that Sweetened Condensed Milk is totally on plan! But, I was sometimes having it multiple times per day, instead of treating it as the treat it is! (Also, just to clarify, I do not count calories on THM, but I try not to abuse them either.)

2 Ingredient Dairy Free Sweetened Condensed Milk (THM-S, Sugar Free, Low Carb)

This got me thinking along the Dairy Free line . . . and my solution was a can of full-fat coconut milk. Full fat canned coconut milk is fairly thick to begin with - add some Gentle Sweet to sweeten it, boil it to condense, and you have Dairy Free Sweetened Condensed Milk! So easy and delicious. And the caloric load is much more friendly! This recipe only has about 35 calories per Tablespoon.

It does have a bit of coconut flavor, but I think this would add a more intense flavor to the Almond Joy Cookies, or even the Mounds Fudge recipe.

My milk only took about 20-25 minutes to condense, but yours may or may not take longer. I have found (by experience) that the larger the surface of the pan (think frying pan), the faster the milk will condense. It should be slightly thick and gooey when it is finished. It will also continue to thicken as it cools.

Ingredients

  • 1 Can Full-Fat Coconut Milk 13.5 oz
  • ⅓ Cup Gentle Sweet or the equivalent of your favorite powdered sweetener

Instructions

  • In a large skillet/frying pan, combine coconut milk and Gentle Sweet.
  • Bring to a boil, and turn down heat to a simmer.
  • Simmer, stirring occasionally, for 20-25 minutes, or until the liquid has reduced by about half.

Notes

My milk only took about 20-25 minutes to condense, but yours may or may not take longer.         No, this recipe uses all of it. It's a good idea to give the can a good shake before opening it to make sure there is no separation. If it has separated and you've already opened, just give it a good stir with a whisk and it will mix together again.

    Does the canned milk have the coconut flavor? If so, do you have other options?

      It does have a slight coconut flavor, but it is not overwhelming. I have not tried any other substitutes for a dairy free option. Perhaps you could use almond milk?

      I have not personally, but some of my readers have reported that they just boiled it longer until it condensed into a caramel sauce!

    This probably can't be made with Pyure stevia, correct? I think I have seen on other recipes that it just doesn't work. But maybe I have my wires crossed.

      I haven't tried it with anything other than Gentle Sweet, so I can't give a definite answer. I think it would still condense, though.

      I make the regular 3 ingredient with Pyure stevia - it's my go to stevia. Going to try this one today. I've never had problems using Pyure in anything.

    I'm curious if this can be made in larger quantities and stored. It so, would it end up crystallizing? I assume it would need to be refrigerated? Just curious if I could do a large batch and call it done for a while. HaHa

      Yes, I have kept the 3 Ingredient recipe (which is not dairy free) in the fridge for up to 2 weeks. It would get firm in the fridge, but soften when left at room temperature. It may take longer to "condense" if you double or triple it.

      I have never tried freezing it, but a lot of people have frozen low carb condensed milk, so it probably would work!

    I just made this, and I quadrupled the recipe so that I would have lots for a couple of different recipes that I want to make. I used Swerve confectioners for the sweetener. My question is this: is it OK that mine turned a light tan color? Yours is so white (and thick appearing) in the pictures. Mine seemed to stay pretty liquid until I got to this tan color stage. Did I let it go too long?

    Two questions .. If I use THM Super Sweet, would that be half of the amount you used of Gentle Sweet? Secondly, to cover the coconut flavor, could you add vanilla extract?

      Yes, I would use half the amount of sweetener if using Super Sweet. You can certainly add vanilla, but I still think it will have a slight coconut flavor.

      I tried with the lite coconut milk and it did not thicken properly so I added about 1/3 cup of coconut cream to “save” it and it turned out beautifully!

    I am new to THM, but I have been very confused when you post the term "sugar free" on your recipes, because some of them are not sugar free. The original recipe you posted for the sweetened condensed milk is an example. You said it was sugar free, but there are 14 grams of sugar in 2 cups of heavy cream! This could be dangerous to diabetics, who may not double-check. Maybe you could consider using what food companies use, which is the term "no sugar added." They do this on ice cream and other foods that contain cream or fruit, which also has natural sugars. Thank you for posting the new 2 ingredient sweetened condensed milk using coconut milk. This sounds great! I can't wait to try it! You post some awesome recipes, and your site is wonderful!!! Thanks! 🙂

    Sarah, I absolutely adore every recipe of yours that I have tried! I too can eat WAY too much of the original s.c.m. recipe. I made a triple batch of this, it probably took close to 30 minutes start to finish. I also use your recipe for Gentle Sweet because, let's be honest, THM is great but pricey. After chilled it's much more....gloppy? than the cream kind, maybe it's the brand of coconut milk I used. Irregardless, it's delicious. It reminds me of cream of coconut for pina coladas. I have water bottle packets of Crush pineapple so I may try a Keto Colada. Seriously though, thank you for the time and money that you invest into putting out so many delicious and free recipes for all of us to enjoy!

      Yes, I believe so. However, Gentle Sweet is a bit sweeter than Lakanto Classic, so you may want to up the amount a little.

    I can't afford the Gentle Sweet but I already have some plain Pyure brand granulated Erythritol & Pyure brand granulated stevia, can I use one of these & can it be used granulated for this recipe?

      Yes, you can use 1/2 the amount of Pyure to replace the Gentle Sweet in this recipe.
