This creamy bowl of oatmeal has the hearty flavors of fall. Sweet and tender apples infused with hearty maple flavor and warm cinnamon. This recipe is low fat, sugar free, dairy free, and a Trim Healthy Mama E Fuel.

I will be one of the first ones to confess that oatmeal is not my breakfast of choice. I much prefer baked oatmeal to stovetop oatmeal. I have several baked oatmeal recipes, including Upside Down Peach Oatmeal Bake and Upside Down Pineapple Oatmeal.

My kids, however, LOVE oatmeal! (I know, aren’t they strange? Most kids detest it!) My daughter even prefers hers (horror!) in the microwave. She doesn’t like it cooked on the stovetop. Oh well, to each their own, I suppose.

I am thankful my kids love oatmeal, as it is such a frugal breakfast! I can get a 25 pound bag of old fashioned rolled oats for about $18 at my local Cash & Carry Store. That makes for a very inexpensive breakfast!

Pumpkin steals most of the show in the fall, but I believe that apples and maple are just as much a fall flavor as pumpkin! So, for all you pumpkin haters out there (are there really people who hate pumpkin?), this recipe is for YOU! (And hopefully a few more to come!) I would add some collagen coffee or a side of Greek yogurt to up the protein count if you were eating this for breakfast.

This maple apple oatmeal does not take long to make, but I’m sure you could even make it as overnight oats. To do that, I would suggest mixing all the ingredients together, adding half a cup of Greek yogurt, and leaving it in the refrigerator overnight. In the morning, you could heat it on the stove or in the microwave.

So, what do you need for this Maple Apple Oatmeal?

1 Small Apple, Chopped (about ¾ cup)

2-3 Tablespoons Erythritol (or your favorite sweetener)

½ Teaspoon Cinnamon

1 Teaspoon Maple Extract

½ Cup Old Fashioned Rolled Oatmeal

Pinch of Salt

½ Cup Unsweetened Almond or Cashew Milk

½ Cup Water

Ingredients

  • 1 Small Apple Chopped (about ¾ cup)
  • 2-3 Tablespoons Erythritol or your favorite sweetener
  • ½ Teaspoon Cinnamon
  • 1 Teaspoon Maple Extract
  • ½ Cup Old Fashioned Rolled Oatmeal
  • Pinch of Salt
  • ½ Cup Unsweetened Almond or Cashew Milk
  • ½ Cup Water

Instructions

  • In a medium sauce pot, combine the chopped apple, erythritol, cinnamon and maple extract.
  • Sautee until apples begin to soften.
  • Add remaining ingredients and bring to a simmer.
  • Simmer for 5-6 minutes, or until oatmeal begins to thicken.
  • Taste and add more sweetener or maple extract if you prefer.

      I use 1/2 Cup Old Fashioned Rolled Oatmeal. I'm sorry, I actually forgot to add the oatmeal in the recipe. Isn't that silly? It is corrected now, though! 🙂

    I am eating this oatmeal right now. It is SO good! Question though, I used a full cup of almond milk. I never have been a fan of water in my oatmeal and then saw the fat content in the almond milk. I'm still new to THM. I used a small amount of half n half with my collagen coffee. Have I gone over my fat for an E meal?

      That would depend based on how much fat is in your almond milk and half and half. 2 Tablespoons of half and half usually has 3 grams of fat, and 1 cup of almond milk has around 2.5. The authors of the book have stated over and over again that this plan is not about numbers, but about guidelines. That 5 grams of fat per E meal is a suggestion, not a hard line. I'm sure you were fine! I usually try to be careful with my half and half when having an E, but I don't stress about it. I'm so glad you enjoyed the oatmeal!

    I was headed up to my 24 Paramedic shift and had waited till the last minute to throw my food together. I put all the dry ingredients and flavorings in a baggie, grabbed an apple and almond milk, and left. I’m eating it now and it’s so delicious!! The fire station smells like I baked an apple pie!

    I made this with xylitol as suggested and my son and I both spent the rest of the day in the bathroom. 🙂 Is there a gentler equivalent that won't affect us the same way? Would using Gentle Sweet or erithritol (sp?) be a better choice?

      Yes, you can use any sweetener you want. You may not need as much Gentle Sweet. 🙂

    This is a very nice recipe and tastes refreshing if you use Greek yogurt as a topping. It is very homey, and the cooked apples add a subtle sweetness.
