I grew up in East Tennessee eating okra every Sunday. My Grandma made fried okra every week for Sunday dinner. No doubt part of my love for okra comes from the warm memories associated with it. All that to say, I have loved okra long before I knew it was so good for me! (By the way, I adapted my Grandma’s recipe - Southern Fried Okra.)

One of my favorite ways to eat okra is to roast it in the oven until it is crispy. This also helps to take care of the “slime” that so many people dislike. I decided to add some bacon to kick it up a notch.

Because of the bacon, you do not have to add any additional oil for roasting. The bacon releases its flavor and flavors the bacon as it roasts. So delicious!

Many of you know that my husband and I work at a school for Native Americans in Montana. (We are the boys dorm parents.) One of my boys came in yesterday at lunch time and I asked him if he wanted to try this crispy roasted okra with bacon. He said he would pick out the bacon and eat it, but NO OKRA! I told him he could pick out the bacon as long as he ate at least one piece of okra for a “no-thank-you-helping.” (Good mom, right?) But guess what? He ate the whole bowl! Okra and all! He even asked me to make it again sometime! So, this recipe passed the taste test of a 17 year old boy. That says a lot, I think!

If you have been hesitant about trying okra, give this recipe a try! 2 12 ounce Bags Frozen Okra

4 Slices of Uncooked Bacon, cut into small pieces

Ingredients

  • 2 12 Ounce Bags Frozen Cut Okra
  • 4 Slices Uncooked Bacon, cut into small pieces
  • Salt and Pepper (to taste)

Instructions

  • Preheat oven to 400.
  • In a large bowl, or on the baking sheet, mix frozen okra and bacon pieces.
  • Sprinkle generously with salt and pepper.
  • Bake for 30-40 minutes, or until okra is roasted and crispy. (You may want to stir the okra once or twice while roasting.)

    Had this and scrambled eggs for breakfast this morning! Oh my gosh. I was running late do I crammed the egg which I only eat because I need the protein and put the okra in a baggie and ate with my fingers on the way to work😂😂. Was soooo good!

      Oh my goodness - you just inspired me with using this recipe for breakfast! I could easily see this adapted to become a breakfast hash!

      Yes! I love air fried okra. I usually do it at 400 for 10-11 minutes.
