Did you know it is really easy to make brownie bites while trying to eat healthy? Raid your pantry and grab your ingredients and get to cooking. 

How Many Brownie Muffin Bites Does This Make

I was able to make 14 brownie mini bites. Now, depending on how you measure out your batter it can vary a bit. 

These mini bites do not rise much so I filled each muffin holder about ¾ the way full of the brownie batter.

Recipe Tips and FAQs

Grease Pan - Make sure you grease your pan good. The brownies will stick otherwise. Use a cooking spray or butter. 

Brownie Bites Add-Ins - You can add more ingredients to the batter if you want. You can add chopped Lily’s chocolate for added flavor. It turned out so delicious. 

Sweetener - Many times I get asked can I swap a sweetener in a recipe. For this recipe you are welcome to give it a try. Always make sure to measure properly when you convert to a different brand - I've put a conversion for Gentle Sweet in the recipe card. 

Mixing Batter - Since this is a simple dessert to whip up you might find a spoon and bowl are all you need. If you overmix it will change the texture of the brownie. 

You can even use a hand whisk, which will be very easy and quick to use.

How To Know When Brownies Are Done

You will know your brownies are done if you take a toothpick and stick in the center of a muffin bite. If the toothpick comes out clean with no wet batter then your brownies are done. 

Since you are using almond flour and sweetener you need to keep a close eye on the brownies. It can go from done to burnt fast.

Can I Swap Out Walnuts

If you are not a fan of walnuts you are more than welcome to leave them out. You can replace with another type of nut or opt to make these as a plain brownie. 

I like adding pecans to replace nuts - or even a slivered almond adds nice texture.

Storing Brownies

This brownie recipe can be stored at room temperature on the counter for 2-3 days.

You can place them in an airtight container or even in a sealable bag. 

Just make sure before you cover them they are fully cooled. Otherwise, the brownies can create condensation in the container and make them soggy and the brownies spoil faster. 

Best Way To Freeze

One thing I highly recommend whether new to the healthy lifestyle or a pro - Meal prep and freeze breakfast, lunches, dinner, and desserts. 

When you have access to foods you need, it helps keep you from hopping in your car to go binge eat. 

To freeze these brownie mini bites you can allow to cool then place in a sealable freezer friendly container. 

The bites will store for around 3-5 months. Then when you want a brownie mini keto dessert you can grab one and let it thaw real fast then enjoy.

  • Make sure to use a fine ground almond flour
  • Feel free to swap out walnuts for another nut or make them without nuts
  • Add in mini chocolate chips (keto friendly) for a sweeter brownie
  • Drizzle with a sugar-free caramel sauce for added sweetness
  • Store in an airtight container once done, to help prevent them from drying out

Ingredients

  • 2 eggs
  • ⅔ cup Swerve Granular
  • ½ cup melted butter
  • 1 tablespoon of vanilla extract
  • ½ cup almond flour
  • ⅓ cup cocoa powder
  • ¼ teaspoon baking powder
  • Half cup walnuts chopped

Instructions

  • Preheat the oven to 350 degrees F.
  • In a bowl, combine all ingredients except walnuts and mix until well combined.
  • Fold in walnuts.
  • Spray a mini muffin pan with nonstick spray and fill each one with about ¾ batter. It will not rise very much.
  • Cook for about 8-12 minutes. Make sure they don’t burn.
  • Let cool for 10 minutes and enjoy!

Notes

To use Gentle Sweet to replace the Swerve, use ½ cup.

    Doubled the recipe, using DIY Gentle Sweet and I got 42 mini brownie muffins! I forgot the vanilla, used pecans, and they turned out great!

    Just made these… I followed the directions as stated, but substituted pecans for walnuts. I ended up with 24 brownie bites. Moist and delicious! A keeper! 🙂
