Low Carb Chai Cheesecake
Rich and creamy, this no-bake cheesecake has all the flavors of your favorite Chai tea! This recipe is low carb, sugar free, gluten free and a Trim Healthy Mama S Recipe.

Every once in a while I get a specific request for a recipe make-over. This particular recipe came about in response to a letter from my husband’s Aunt. She sent me a copy of a recipe that her and her daughter love (from a magazine). The original title was No-Bake Chai Cheese Pie.
However, that recipe used sugar, a ready-made graham cracker crust, and french vanilla creamer. (Not exactly low carb or Trim Healthy Mama friendly.)
With a few tweaks, I was able to convert that recipe to this lovely creation. I chose to simply call it Chai Cheesecake (less syllables, ha)!
The first time I tried to make it, I did not have all the correct spices. I left out the cardamom and cloves and added extra cinnamon. The result was delicious (it somehow tasted like apple pie cheesecake). I have plans for a caramel apple cheesecake now.
However, it was not the “Chai” flavor I was trying to achieve. I sent my husband to Walmart, where he promptly called me on the phone . . . “Cardamom is $9 a bottle!” Yes, it is a bit expensive, but he was able to get the Walmart organic brand for $5. One jar of cardamom will last you a long time . . . and if you need ways to use it up, you could check out this Instant Chai Tea Mix.
I made the recipe again - this time with the proper spices. I placed it in the refrigerator on the top shelf. A couple hours later one of my kids set a large bag of cheese sticks directly on top of my beautiful cheesecake. (That is why there are not photos of the entire dessert - only sides!) Oh well, that is real life - I’m normal, and so are my kids - just like everyone else!
This Chai Cheesecake is simplified by the fact that there is no baking involved. The crust is very soft, and may not look like it is enough when you first mix it. But if you put it in the bottom of the pan, you can easily press it out completely (wetting your fingers lightly with water helps a lot).
The filling is super easy as well. Simply mix everything together and pour it in the crust. This will be a perfect recipe for summer because you will not have to turn on the oven! But you definitely should make this dessert before then!
So what do you need for this Low Carb Chai Cheesecake?
For the Crust:
⅓ Cup + 2 Tablespoons Trim Healthy Mama Baking Blend
2 Tablespoons Gentle Sweet
¼ Teaspoon Cinnamon
3 Tablespoons Melted Butter
2 Tablespoons Water
For the Cheesecake:
1 Individual Tea Bag (Chai flavored for a stronger flavor, or any regular tea bag.)
½ Cup Boiling Water
1 Envelope Unflavored Gelatin (about 2 Teaspoons)
2 (8 ounce) Packages ⅓ Less Fat Cream Cheese
⅔ Cup Gentle Sweet
¼ Teaspoon Cinnamon
¼ Teaspoon Ground Ginger
⅛ Teaspoon Ground Cardamom
⅛ Teaspoon Allspice
⅛ Teaspoon Cloves
¼ Cup Half & Half

Low Carb Chai Cheesecake
Ingredients
For the Crust:
- ⅓ Cup + 2 Tablespoons Trim Healthy Mama Baking Blend
- 2 Tablespoons Gentle Sweet
- ¼ Teaspoon Cinnamon
- 3 Tablespoons Melted Butter
- 2 Tablespoons Water
For the Cheesecake:
- 1 Individual Tea Bag Chai flavored for a stronger flavor, or any regular tea bag.
- ½ Cup Boiling Water
- 1 Envelope Unflavored Gelatin about 2 Teaspoons
- 2 8 ounce Packages ⅓ Less Fat Cream Cheese
- ⅔ Cup Gentle Sweet
- ¼ Teaspoon Cinnamon
- ¼ Teaspoon Ground Ginger
- ⅛ Teaspoon Ground Cardamom
- ⅛ Teaspoon Allspice
- ⅛ Teaspoon Cloves
- ¼ Cup Half & Half
Instructions
For the Crust:
- In a medium bowl, mix Baking Blend, Gentle Sweet, Cinnamon, Melted Butter and Water until a soft dough forms.
- Press crust into the bottom of a prepared 9 inch Springform Pan. (You will want to spray with nonstick spray first.) It is also easier to press out the crust if your fingers are slightly wet.
For the Cheesecake Filling:
- Place tea bag in a mug and pour boiling water over the bag. Let steep for 5 minutes, then remove tea bag and throw away.
- Sprinkle gelatin over the top of the tea, then mix well and let stand for 1-2 minutes.
- In a medium bowl, beat softened cream cheese with Gentle Sweet, then add all spices and half and half.
- Add tea mixture and mix again.
- Pour over top of the crust and refrigerate for 3 hours or until set.

When i see unflavored gelatin in recipes, I wonder if my collagen powder would work as a substitute. Would it?
