This crustless cheeseburger pie is like eating a burger without the mess. This easy burger recipe is gluten free and keto friendly and simple to customize to your family’s favorite flavors.
Ingredients In Crustless Cheeseburger Pie
This is basically a cheeseburger casserole: you combine your ingredients, bake, and serve. And it’s a recipe that you can might even be able to make last minute, as it uses common household ingredients (don’t you just adore recipes like that?).
So what do you need to make hamburger pie at home?
- Ground chuck (ground beef)
- Onion
- Garlic powder
- Dry mustard
- Black pepper
- Salt
- Eggs
- Heavy cream
- Shredded cheddar cheese
Optionally, you can add your favorite burger toppings, as well (more on that below!)
How To Make Easy Cheeseburger Pie
So how do you make this absolutely delicious low carb cheeseburger casserole? It’s so simple!
Because it’s a pie, you’ll use a 9” round pie plate. If you don’t have one, though, you can use an 8x8 casserole dish with no issues. Go ahead and make sure whatever you use is greased.
You’re going to pre-cook your beef with the onion in it for some added flavor. Drain it well and then spread it evenly across the bottom of your casserole pan.
In a mixing bowl, combine the eggs, heavy cream, and spices. Whisk them very well to make a creamy sauce. Pour it over the ground beef as evenly as possible.
Top with your shredded cheese and bake it until the cheese is all melted and bubbly. It will smell so good at this point that your family will be clamoring around, wondering where the burgers are!
You’ll want to let the cheeseburger pie rest for about 5 minutes before serving it, so that everything settles enough to plate it up.
Making Cheeseburger Casserole In The Slow Cooker
If you wanted to make this in the slow cooker, you’d follow the exact same steps and cook on low for 4-5 hours until the center of your pie has “set.” It’s a very simple recipe to move into a crockpot.
How To Serve Your Cheeseburger Pie
If you want to, you can add ingredients to your ground beef before adding the cream sauce. One of my favorites is to add a cup of chopped pickles. Bacon is also delicious added to it (isn’t it always, though!).
Really, you can add any of your favorite burger toppings layered over the meat and under the cheese before baking.
Alternately, you can chop up your toppings (think pickles, tomatoes, onions, shredded lettuce, bacon bits, jalapenos, etc) and everyone can sprinkle their topping of choice on their slice of hamburger pie.
One of our favorite ways to enjoy this low carb beef casserole dinner is served over a bed of shredded lettuce and sprinkled with freshly diced tomatoes and pickles. You can drizzle some sugar free ketchup, BBQ sauce, and/or mustard on top if you’d like, too.
Fun Variations For Cheeseburger Pie
If you don’t want to serve toppings on the side, this cheeseburger pie recipe can be used as a blank canvas for your favorite treats. Each time you make it, you can customize it to reflect a favorite burger.
Southern BBQ Burger
Instead of adding the onions to the beef, go ahead and caramelize them and spread on top. Serve with your favorite keto friendly BBQ sauce drizzled over it.
Spicy Burger
Like to heat up your meals? Top it with pickled jalapenos and use monterrey or pepper jack cheese instead. Bell peppers and onions are also delicious with this version.
California Burger
Top your burger with sliced avocado, tomato, and purple onion...or a heap of guacamole. Use monterrey cheese.
Mushroom Bacon Swiss
Add some sauteed mushrooms, crispy bacon, and top with melted swiss cheese for this decadent, savory slice of cheeseburger casserole.

Serving & Storing Your Low Carb Cheeseburger Casserole
Like most casseroles, you can prep this meal ahead of time and just bake it prior to serving.
To keep any leftovers fresh, store them in an airtight container and refrigerate them. They’ll keep up to a week.
For reheating, the microwave is fine. Whenever you have a cheese recipe, it’s always nice to sprinkle some water in the bottom of your dish around the food (just a tad!) and cover lightly before reheating as it will help the cheese melt again instead of dry up.
You can serve a slice of this on your favorite low carb bread for a burger sandwich or in a lettuce boat. It’s great with a fresh side salad or covered with chopped veggies.

Ingredients
- 1 ½ Pound Ground Chuck (ground beef)
- 1 Small Onion, chopped
- ½ Teaspoon Garlic Powder
- ½ Teaspoon Dry Mustard
- ½ Teaspoon Black Pepper
- ½ Teaspoon Salt
- 6 eggs
- 1 Cup Heavy Cream
- 1 Cup Shredded Cheddar Cheese
Instructions
Preheat oven to 350 degrees. Spray a 9 inch round or 8x8 inch square casserole dish with coconut oil cooking spray.
Cook the ground beef/chuck with the onion. Drain well.
Spread the beef mixture evenly in the baking dish.
In a mixing bowl, whisk together the seasonings, eggs, and heavy cream. Slowly pour over the beef mixture so it sinks into the meat.
Top casserole with cheese.
Bake for 30 to 35 minutes or until the center is set. Allow the casserole to rest about 5 minutes before slicing.
Serve with cheeseburger toppings like pickles, mustard, lettuce, tomato, bacon, etc.

I have made a cheeseburger pie similar to yours in several different versions Sloppy Joe version with French Onion Soup and all the normal hamburger seasonings. I also made the original pie, plus I ampted up the original pie adding and taking aware things. I really liked that one as I used my favorite seasoning it made it more spicy. My favorite is one I made using mexican seasoning kinda like taco or burritos, lots of onions, cheese used crushed taco chips for this crust. I have started going crustless lately to make it more carb friendly might try using cauli rice or zoodles for something different.. Have used pie crust, hash browns, taco chips as my crust and smashed tater tots or rice. You gave some great ideas for other changes when I use up what I have frozen. I like the CA pie, spicy burger and BBQ ones!! Thanks Lan
