Making your own strawberry cottage cheese ice cream is surprisingly easy—and you only need four simple ingredients:

  • Fresh strawberries (hulled and halved)
  • Cottage cheese (full-fat or low-fat, depending on your preference)
  • Keto Honey or keto maple syrup (or another sweetener of your choice - see recipe card for more options)
  • Vanilla extract

Step-by-Step Instructions:

  1. Blend the Ingredients
    Add the strawberries, cottage cheese, sweetener, and vanilla extract to a blender or food processor. Blend until the mixture is smooth and creamy.
  2. Transfer to Container
    Pour the blended mixture into a freezer safe container and smooth the top with a spatula.
  3. Freeze
    Cover and place in the freezer for several hours, until firm (about 4 hours for best results).
  4. Let It Thaw Before Scooping

If you do have a Ninja Creami, you can also freeze the mixture in the Creami container and spin it when ready. (However, I do not personally own a Creami, so I'm not completely sure of all the correct processes to use it!)

  • Frozen strawberries help thicken the texture right away and are great if strawberries aren’t in season.
