Trim Healthy Mama Chicken And Rice

I have found myself gravitating more to the FP (low carb/low fat) and E (healthy carb) fuels recently. Now, don’t get me wrong...I still love my S (low carb) fuels as well, but diversity is not only delicious but very healthy.

But I think I have begun to realize that you cannot eat cream cheese, heavy cream, and all these Heavy S fuels all day long. It is good to juggle your fuels (which is something that THM has always taught, but sometimes takes a while to transition to).

Perhaps it has something to do with being a “Mature THM.” Pearl and Serene talk about how your eating changes the longer you are on the THM plan, and personal experience proves that to be true.

Those delicious S fuels and recipes are what makes this plan easily doable in the beginning. It is amazing all the delicious things you can eat, and still lose weight!

But as time progresses, some people (ahem...me, at least) begin to see a stall in their weight loss. Sometimes we focus too much on the S fuels and forget about those amazing E’s and FP’s!

Trim Healthy Mama is a beautiful plan of BALANCE. No major food groups are left out of your diet, but it is important to keep a balance to your eating as well! Many people, including myself, find that you lose better when you eat more E meals/snacks.

And while I'm not perfect at this way of eating, I can definitely tell you I am dedicated to it.

I still go off plan (more often than I would like to admit) sometimes. If you have followed my blog for any length of time, you are probably familiar with my struggles. And you may struggle, too. That's okay...just pick back up with your next meal.

Easy Cheesy Chicken And Rice Casserole

No doubt the Instant Pot is has become a favorite kitchen appliance in homes everywhere.

My husband bought one for me years ago at Christmas and it sat lonely and unused because I was scared of it. I had no clue what I was missing out on! But now? Watch out! It gets used several times a week.

Not only does an Instant Pot speed up cooking time, but it uses up to 70% less energy. It's a serious kitchen win.

I use it to cook chicken breasts, steam eggs, cook (Dreamfields) pasta, make soup, chicken wings, and now this easy Chicken and Rice recipe! (This is the Instant Pot I have.)

You can also use it to make an easy Bone Broth...so much faster and more simple than in the crock pot or on the stovetop.

This Instant Pot cheesy chicken and rice dish has a secret ingredient. I wanted to make this a “Cheesy” chicken and rice dish. However, if you are familiar with Trim Healthy Mama, you know that cheese (S) and brown rice (E) don’t mix well together for weight loss – you end up with a crossover!

So instead of the traditional cheddar or other cheese, you're going to use Light Laughing Cow Cheese. It's low enough in fat that you are still well within the E guidelines and so creamy and delicious that you still get to the full comfort food feeling when you eat this easy chicken and rice casserole.

This also calls for the Trim Healthy Mama Bullion Mix. This adds flavor to the recipe, and the nutritional yeast deepens the “cheesy” level!

I also learned another trick from the Trim Healthy Table Cookbook – using riced cauliflower in brown rice dishes. This enables you to make them stretch further, and lowers the carbs a bit so you can actually eat MORE (and more on a dish this delicious is definitely a good thing).

Now I know what you're thinking. Cauliflower is not rice. You're right, but I promise: no one will ever know that there is cauliflower in this dish unless you tell them. It blends in perfectly with the rice.

You can buy some already riced or make it yourself, just be sure to make certain it's plain and not pre-seasoned. I was excited to see this particular blend (pictured below), and I can’t wait to use it in more recipes.

Ingredients

  • 1.5 Pounds Boneless Skinless Chicken Breast cut into bite-sized pieces.
  • 3 Tablespoons Trim Healthy Mama Bullion Mix easy to make, or you can use your own favorite bullion
  • 1 ½ Teaspoons Salt
  • ½ Teaspoon Marjoram
  • 1 12 ounce Bag Riced Cauliflower
  • 2 Cups Uncooked Brown Rice
  • 2 ½ Cups Water
  • 6 Light Laughing Cow Cheese Wedges
Get Recipe Ingredients

Instructions

  • Place all of the ingredients except Light Laughing Cow Cheese into the Instant Pot Liner and stir well.
  • Place lid on Instant Pot and close and seal the valve.
  • Process at manual pressure for 22 minutes.
  • Allow to Natural Pressure Release for 10 minutes, then Quick Release.
  • Unwrap Light Laughing Cow Cheese Wedges, cut into small pieces and stir into the rice mixture.

Notes

If you do not have an Instant Pot, I believe you could make this in your oven, but I have not tested this method yet. 
 
I would suggest putting the ingredients into a 9x13 glass dish and covering with foil. Bake at 350 for 45 -60 minutes or until done.

    marjoram.... Hmmm? That scares me 😁 I’ve never tasted of this. Is it a describable flavor? Does the flavor compare to anything else I may be familiar with? In your personal opinion, does this spice make the dish fabulous or is something I could leave out and it be no big deal???

      Marjoram is in poultry seasoning, so you've probably had it & didn't realize it. It's not spicy or weird.

    Very good! My rice was just barely undercooked but I used brown basmati rice, so I think that's why. Also used oregano for the marjoram, and added some peas at the end for color. Will be adding into the rotation for sure!

    I'm allergic to cauliflower. Could I just increase the rice amount ? But, I'm thinking rice absorbs liquid where cauliflower doesn't. Maybe this recipe isn't for me. Any thoughts ?

      You can just omit the cauliflower rice, and it should still be fine.

      Hi Marcie! I'm so sorry the recipe was not a success for you. Were you using a particular kind of brown rice? I've found that some varieties take longer to cook, and would perhaps need more moisture.

      The first time I made this, I questioned the only 2 1/2 cups of water to 2 cups of brown rice. I went with my gut and used 4 and 1/2 cups, since you double water to rice on the stove. It turned out perfectly. Maybe that is the issue?

    I have been enjoying your blog and recipes since I started with THM.
    I haven't made this yet, but it's on the menu schedule for next week. One question...I usually double my water amount to the rice amount, which means for 2 cups rice I would use 4 cups water. I hope it won't be too runny, but I'll assume it has to do with the kind of brown rice I use. Nor do I want my pot to run dry and then burn the rice.

    I'm making this for the second time in just a few weeks! So yummy! I don't have an instant pot, so I just do it on the stovetop. I brown the chicken first and use instant brown rice and just put everything in the same pot. It works beautifully. Thanks for what my husband said is the best chicken and rice he's ever had. Me too!

    Just made this tonight and it was so good! I've made the "original " version with all of the condensed soups in the past, and this was honestly even better and THM friendly! Yay!! My only problem is it makes a lot. I don't think it's freezer friendly, but I'll have yummy leftovers for a few days! Thank you for sharing the recipe!

    How much bouillon paste would you use? That is the type I use. it says 1 tsp of the past equals 1 bouillon cube. How would that equate to your 3 Tbsp of your bouillon mix?

    Hi Sarah in Montana! I'm Sarah in Idaho! I committed to the THM way of eating a little over 2 years ago and lost over 60 lbs. but found myself stalling no matter what I did, so I decided to take a break and just settle into Crossover mode for awhile. Well, I didn't just settle into Crossover...I started eating the "old" way again (ie. not watching my carbs/fats, eating sugar) and I've found that I've gained back a flabby belly and probably about 10 lbs. Not happy about that! 🙁
    So, long story short: I'm ready to commit to THM again, and I'm especially excited to start using my new electric pressure cooker I gifted to myself for my birthday (hubby didn't think he should give it to me for a birthday gift since it's not "special" lol)
    Thanks for the E recipe (I crave a lot of those too b/c I don't do so well on a lot of S meals), and I look forward to your future Instant Pot recipes!

    This is one of my favorite instant pot recipes. But, i'm visiting my daughter and didn't have room for the instant pot in the car. I've tried it twice in the oven and both times the rice was completely uncooked. I used parboiled rice thinking that it would cook better that way. No luck. I thought about cooking the rice first and then adding. But, I was afraid that it would become mushy. So, instant pot from now on.

        This is such a comfort food texture and flavor. Soo good! I had mine on top of a huge plate of baby spinach (was pretty sure the 1 cup serving wouldn’t satisfy me. The spinach wilted perfectly. So yummy!

    I was out of regular brown rice and marjoram when making this tonight. Instead I used instant brown rice and poultry seasoning. I used the rice setting on my instant pot (12 minutes on low pressure). I cut the water back to 2 cups since it was instant rice. It came out perfectly! My family loves this recipe, it's a staple in our house! I also love how versatile it is! In the past I've thrown in an extra bag of frozen seasoning blend or used bouillon paste instead of the salt and bouillon mix. It always comes out a winner! Thanks for such a great recipe!

    This was excellent! After reading the comments, I added an additional 1/2 cup of water and it definitely was not necessary and maybe even added a too much moisture. I used my homemade chicken bone stock and jasmine brown rice. Next time I may add diced mushrooms just for an added filler. I’ll also serve it with either an E salad and non-starchies! 1 cup is a small portion size for me 😬

    This is my first instant pot casserole and we Love this recipe !!! Thank you so very much!!!We have multiple allergies and it has been easy to pull out those who are dairy free and then add the cheese for those who can have it. Only sub we did is I’m allergic to cauliflower so we use broccoli. This will be a weekly meal for us!!

    Loved this! I don’t have an Instapot, so this is how I cooked it by stove/oven:
    Cook rice separate in large pot
    Cook chicken pieces in skillet
    Steam cauli-rice in microwave (steam in bag)
    Once rice has cooked on burner for the specified amount of time on package, open it, there will still be liquid and the rice will still be slightly crunchy. Pour in the seasonings, riced cauliflower, and laughing cow cheese. Stir all together until well mixed, fold in chicken. I took this opportunity to also throw in some chopped broccoli florets (optional but suggested). Cover with foil and cook at 350° for 25-30 minutes. The broccoli will soften and the rice will cook from slightly crunchy to perfect. (NOTE: I used “light brown rice, so not sure about the full long grain brown rice).
