An easy chocolate cheesecake, ready in minutes, and so easy that you don’t even have to turn on your oven! Chocolate cookie crust and creamy chocolate cheesecake filling. This recipe is low carb, sugar free, gluten free, and a Trim Healthy Mama S Fuel.
I know it is September and people’s thoughts are turning toward pumpkins, apples, and all things spice. But I still have this awesome no-bake cheesecake to share with you. It is so easy, creamy, and delicious! (I may or may not have eaten if for breakfast several times! Ok, I did.)
I used the Trim Healthy Mama Baking Blend for the crust, but if you do not have the Baking Blend, you can use a mix of equal amounts of almond flour, coconut flour, and flax meal.
This cheesecake uses three packages of cream cheese. The nutritional information below is calculated using full-fat cream cheese. But this recipe will work just as well if you choose to use 1/3 less fat cream cheese.
So what do you need for this recipe?
For the Crust:
1/2 Cup Trim Healthy Mama Baking Blend
2 Tablespoons Cocoa Powder
2 Teaspoons Gentle Sweet (or your favorite low carb powdered sweetener)
2 Tablespoons Melted Butter
1 Tablespoon Water
For the Filling:
3 8 Ounce Packages Cream Cheese
1/4 Cup Gentle Sweet (or your favorite low carb powdered sweetener)
1/4 Cup Lily’s Chocolate Chips, Melted
2 Tablespoons Cocoa Powder
2 Teaspoons Vanilla Extract

No Bake Chocolate Cheesecake
Ingredients
For the Crust:
- 1/2 Cup Trim Healthy Mama Baking Blend
- 2 Tablespoons Cocoa Powder
- 2 Teaspoons Gentle Sweet or your favorite low carb powdered sweetener
- 2 Tablespoons Melted Butter
- 1 Tablespoon Water
For the Filling:
- 3 8 Ounce Packages Cream Cheese
- 1/4 Cup Gentle Sweet or your favorite low carb powdered sweetener
- 1/4 Cup Lily’s Chocolate Chips Melted
- 2 Tablespoons Cocoa Powder
- 2 Teaspoons Vanilla Extract
Instructions
For the Crust
- In a mixing bowl, combine all of the crust ingredients together.
- Using your fingers, or the back of a spoon, press crust into the bottom of a 9 inch Springform pan or pie pan.
For the Filling
- Combine all the filling ingredients and mix well with a hand mixer or stand mixer.
- Pour the filling into the crust, and refrigerate for two hours.
- Slice into 8 pieces.

I would say my favorite part was how easy it was to make and no baking at all! But I think my favorite part was licking the bowl! I did however add some whipped cream to the bowl to make licking the bowl even better!

Instead of using the Healthy Mama baking mix can you tell us how to substitute using our own please?

Sorry to ask again. In the filling, it calls for a 1/4 cup of melted. What is it? I’m supposing chocolate but it might be butter. Could you let me know?
