Ingredients You Need

This zucchini skillet recipe is incredibly simple. Here’s what you need:

  • Sausage – Any type works! I love Adele’s chicken sausage, but you can use Italian sausage, turkey sausage, or even smoked sausage.
  • Zucchini – Diced into small pieces for quick cooking.
  • Onion – Thinly sliced for the best caramelization.
  • Avocado oil – Just a little to sauté everything.
  • Salt and Pepper - only if you want - I don't usually add them.

Want to mix it up? Add bell peppers, garlic, or yellow squash for extra veggies and flavor!

How to Make Sausage and Zucchini Skillet

1️⃣ Prep Your Ingredients

  • Slice the onion as thinly as possible so it caramelizes quickly.
  • Dice the zucchini into bite-sized pieces.
  • Cut the sausage into small chunks for even cooking.

2️⃣ Heat the Skillet

  • Heat a large skillet over medium-high heat.
  • Add 1 teaspoon of avocado oil and let it warm up.

3️⃣ Cook the Veggies

  • Add the onion to the hot skillet and cook for about 1 minute.
  • Toss in the zucchini and sauté for 2 or 3 minutes, stirring occasionally.

4️⃣ Add the Sausage

  • Stir in the cooked sausage and let everything brown nicely.
  • Cook until the sausage and veggies are golden brown and caramelized.

5️⃣ Serve & Enjoy

  • That’s it! This skillet meal is ready to serve as-is.

Ingredients

  • ½ Medium/Large Zucchini diced
  • ½ Sweet Onion thinly sliced
  • 1 Smoked Sausage Link I like to use Aidell's brand, sliced
  • 1 Teaspoon Avocado Oil

  • Heat a large skillet over medium heat and add Avocado Oil.
  • Sauté the Sweet Onion for 1-2 minutes until soft.
  • Add the Zucchini and cook for 2-3 minutes, stirring occasionally.
  • Stir in the Smoked Sausage and cook until everything is golden brown and caramelized.
  • Serve hot and enjoy.
