Sugar Free Keto Fudge

Have you ever tried a fudge recipe with sweetened condensed milk before? They are sooo good, not to mention easy to make. Bonus? It's a microwave fudge recipe -- you don't even need to turn on your stove.

Now what if I told you that you could make a sugar free low carb fudge recipe with sweetened condensed milk?

No, it's not too good to be true! Well, the 2 ingredient low carb fudge tastes almost too good to be true, but the recipe isn't. It's simple, fast, and fun to make.

Why is it that we have such strong memories associated with food?

It is true . . . there are some foods that evoke strong emotions and feelings – many times because it connects us to our past – whether that be in a good way or a bad way.

Fudge brings back warm memories to me!

We only had fudge at Christmas time – it was just something special that we only expected at that time of year.

Why is it that we relegate some foods to only a month or two out of the year? I would rarely even think about making fudge in the summertime, but why?

I rarely think of making soup in the summertime (though Montana has changed my mind about that in some measures)!

And what about pumpkin? Some people think it horrible to eat pumpkin before October! (I think pumpkin can – and should – be enjoyed all year long...so try this pumpkin pie!)

2 Ingredient Fudge (Low Carb, Sugar Free, THM-S)

Habits, I suppose . . . and our cultural influences are strong.

Growing up our neighbor would make us a beautiful tin of fudge, and my sister and I always looked forward to it; we knew it was finally Christmas time when she brought us her holiday fudge recipe.

And the best part? She would bring equal amounts of peanut butter fudge and chocolate fudge. I would be hard pressed to say which was my favorite.

This fudge brings back those warm fuzzy feelings (but without the sugar crash)! I say let's make this easy holiday fudge for Christmas in July. And maybe for Easter. Possibly to celebrate the end of the school year. And really, on any day that ends in "y" because it's perfect then, too.

Low Carb, Sugar Free Sweetened Condensed Milk

Simple 2 Ingredient Fudge

Now, I should make a qualifying statement – this fudge is only two ingredients if you already have the sugar free sweetened condensed milk ready.

So, maybe I should say this is 5 ingredient fudge. But lets not quibble over numbers – the important thing is that you need to make it!

I try to have at least one cup of this low carb sweetened condensed milk in my fridge at all times because I can have easy microwave fudge in only 1o minutes...or amazing coffee (it is soooooo good in iced coffee!).

This Sugar Free Sweetened Condensed Milk is good for so many things! (Think Almond Joy Cookies and Homemade Coffee Creamer.) Delicious!

2 Ingredient Fudge (Low Carb, Sugar Free, THM-S)

EASY MICROWAVE FUDGE

Many of you have no doubt heard of easy microwave fudge made with sweetened condensed milk and chocolate chips. This recipe is a sugar free microwave fudge version of that holiday favorite.

If you prefer not to use the microwave, you can totally use it on the stove top. You choose (you're the chef, after all!).

And that is what makes this the best holiday fudge recipe; even in the midst of the hustle and bustle of Christmas, you can still whip up this fudge with a minimum of mess, time, and effort. And everyone will love you for it (if you choose to share it with them).

Instead of being stuck in the kitchen cooking holiday treats, you can make this in ten minutes and spend more time with your family – and that is one of the things the Holiday season is all about!

2 Ingredient Fudge (Low Carb, Sugar Free, THM-S)

How To Make Easy Sugar Free Fudge

This recipe is incredibly versatile. You can make a single serving or a huge batch. You can double it, triple it, or more. I mean really, can you have too much low carb fudge on hand? No, the answer is no.

If you just want a few pieces of fudge for a late night treat, you can make just a few. Or you can make more and surprise your family with it for tomorrow.

And bonus: this recipe freezes very well, so you can make up a whole batch of fudge with sweetened condensed milk ahead of time and pull it out for company, special occasions, or to enjoy while curling up with a good book.

I originally used Lily’s Stevia-Sweetened Chocolate Chips in this recipe, but you can also use Trim Healthy Mama Sugar Free Chocolate Chips.

Just mix the chocolate and low carb sweetened condensed milk together in a bowl and microwave. After one minute, go ahead and stir it. Continue to heat and stir in short intervals until it's fully combined.

You can pour it into your favorite chocolate molds or a silicone ice cube tray and then freeze. That's it. You're done.

If you'd like to add chopped nuts, go right ahead. Almonds, walnuts, hazelnuts...the sky is the limit!

Ingredients

  • 1 Cup Low Carb Sugar Free Sweetened Condensed Milk
  • 1 Cup Lily's Stevia Sweetened Chocolate Chips

Instructions

  • Combine both ingredients in a microwave safe container, and microwave for 1 minute.
  • Stir, and microwave in 10 second intervals until chocolate chips are completely melted.
  • Pour into molds and freeze until solid.

Notes

I made my fudge in an ice cube tray with a silicone bottom (similar to these). After popping them out, I cut them in half for generous serving pieces. This gave me 24 pieces of fudge.
 
The neat thing about this fudge is that you use equal parts of the milk and chocolate chips to make as much or as little fudge as you want.
 
If you only want a small amount, only use 1/4 cup condensed milk and 1/4 cup chocolate chips.

    I and trying to figure out what to add to the sweetened condensed milk to make a dipping sauce for coconut shrimp. (Similar to the one at Red Lobster)

      I would think coconut,a little crushed pineapple and heavy whipping cream. And the orange sauce is just orange marmalade melted,maybe with a bit of butter.

      They are not technically "on plan," but I have used them in a pinch. The malitol upsets some people's stomachs, so just be aware of that if you choose to use them! 🙂

        Try not to use Malitol. It’s pretty high on the glycemic index. Not as healthy as Stevia erythritol or Monk fruit

      I used Bake Believe sugar free chocolate chips . Walmart sells them. I nuked the chips & condensed milk and it poured nicely without separating. Not long after, I nuked again, that's when the oil began separating. Next time I'll spoon in when hard to pour. Great recipe!

        I think this generally happens when the mixture has been overmixed? But even then, it's still fine after it refrigerates - you can use a sharp knife to cut off around the edges if you wish.

    I made my SF sweetened condensed milk and then the fudge, so the milk was still warm and mostly melted the Lily's chips. I was not sure this was going to make it to the freezer since I kept sampling it! LOL

    I didn't have any Lily's, no one around here carries it, so I used unsweetened baking chocolate and added more sweetener. It is so good! Thank you, now I can make fudge and have it be on plan!

    My "fudge separated when i microwaved it. There was a bunch of oily stuff and then there was chocolate. I tried to blend it together but it didn't work.

      My 2nd batch of fudge also separated (like Cyndi's). I think it was because I put the chocolate into the condensed milk when it was still very very hot. So I got out my stick blender, and finally when the "fudge" was starting to cool down, it all blended together. It took almost 15 minutes of blending/cooling though, before that started to happen. Next time I will be sure to let my condensed milk cool down at least a little bit before adding the chocolate.

      Mine did this too but i just stirred it and froze it anyway. The end result was perfect. So the results didn’t seem to be effected by the oily separation of the microwave.

    Why does this have to be frozen instead of just refrigerated? I notice many of the thm recipes similar to this require the freezer, but I always assumed it was because they usually have a lot of oil in them. But this fudge has no oil in it, so why freeze? Does it have to be kept in the freezer, or is it just to make it set faster?

      I have not done that, but it may be worth a try! The coconut oil in the skinny chocolate will melt a lot faster than the Lily's chips, so just keep that in mind. 🙂

      The complete ingredient list is actually showing - the ad is in between the ingredients and instructions. 😉 The ingredients are only the homemade sweetened condensed milk and Lily's chocolate chips.

        Yeah the ingredients list just says 1 Cup homemade sweetened condensed milk and then 1 Cup.

        So maybe they had the same issue.
        Also decent recipe but I used way less condensed milk and it worked out a bit better 🙂 more like fudge and less like cold ganache.

    Love this!! Just in case folks want to know--if you can't find the Lily's chips--I measured and 1/2 C chips was really close to 3 oz--so I melted 2 of the 3 oz Lily's bars so that I could save my chips for those almond joy cookies.

    I do not have any sugar free chocolate chips here in Mazatlán Mexico . I did find the dry powder. How can I use that ? I will some chips home when I go to the states.

      I'm not sure that cocoa powder can be used in this recipe. Perhaps if you made homemade chocolate chips? I think the cocoa butter in the chips is part of what helps the fudge to set.

    For those using Hershey's sugar free chips, the fudge doesn't set well. It is really soft. I would recommend using twice as many chips or half as much condensed milk. Going to try the Lily's chocolate chips when I feel like ordering on Amazon! 🙂

    I divided mine and with 1/2 I added 3 drops of peppermint essential oil and it was wonderful! I think I will melt my non-peppermint back down and add it to all of it! Thank you for this recipe!

    I cannot believe how wonderful this fudge is. The texture is perfect and the taste is even better. If I had not made it myself, I would never have believed that this fudge is sugar-free. Thank you for creating and posting such an excellent recipe!
    I will admit that I added a little more Gentle Sweet as I was stirring the chocolate chips into the condensed milk. I'm not quite a fan of dark chocolate, so that really brightened up the flavor for me.

    I have made this fudge twice, following the directions EXACTLY. The first time I made the Condensed Milk in a saucepan, the second time I made it in a frying pan, which seemed to work better. But both times, once I poured the melted chocolate and condensed milk into the molds, it looked fine, but when I took it out of the freezer it was all separated and gross. There is NO way that I could have mixed it together better. The first time that it happened, I figured that maybe it wasn't mixed up all the way during the microwave/stir phase. So the second time that I made it, after I microwaved the chips and milk, and mixed well, I also used a mixer to make sure that it was all mixed properly. It looked good, no lumps, no separation. But one hour later, all I have is a tray of separated gross looking something. What could the issue be??

      I am so sorry you have had trouble, Gayle. Sometimes this happens to me when I make it, but it is usually just a thin layer around the edge where the butter separates. I usually just eat it that way and it tastes fine, or I use a knife to trim that part off. I do not know the scientific reason for why that may happen, but I'm assuming it has something to do with the butter separating.

        I'd had this problem, not with this recipe but similar ones in the past. I read somewhere that it happens because you have mixed it too much and that causes the chocolate to seize and therefore separate. I'm not a chemist but I have done lots of cooking and it makes sense.

    I made this recipe tonight.. really quite yummy for a healthier sugar-free version of fudge! Thank you SO much! I made your sweetened condensed milk recipe first and that turned out really good too. I haven't had chocolate for 4 months or any desserts so this was a big treat for me. It's awesome to know there are healthier "sweet" sugar-free recipes available that can take the place of sugar desserts. The oil did separate some in the final product, but I knew already to expect that from the other comments so it didn't put me off too much. Thanks for the great recipe.

    I made these tonight. At first, I was concerned about making the condense milk however it came out perfect! I had purchased 1-ounce molds and used them. They are very yummy.     It might satisfy you to combine so many ideas,ingredients ,etc., but for me it is bothersome and verrrrry hard to manage.We are reading online , and it is too hard to manage!!!!!!!!!!!!!

    So delicious and easy to make too! Need I say more?! The texture was smooth and creamy and no one would ever know that it was whipped up in the microwave.

    I haven't tried this recipe yet but am planning to this weekend. Did you grease the ice cube trays or did the fudge just pop out easily?

      It would be best to grease the ice cube trays. Most of the time now I just grease an 8x8 glass pan and pour the fudge in. Or line the 8x8 with parchment paper.

      I'm not sure. The butter separated a little from the fudge the last time I made it as well. Maybe it wasn't mixed well enough?? I made the sweetened condensed milk on the stove but forgot to add the butter to the heavy cream & sweetener at least 15 minutes into it! Maybe that was it. No idea, tho. But it still tasted amazzzzing!!! Even the VERY picky eaters in my home loved it.

    This fudge was SO amazing! Super easy to make and ooh so yummy. I would recommend freezing it then just when frozen transfer to a Ziploc bag (if you're not planning on keeping for a while) and DEVOUR! I didn't have enough dark chocolate chips so had to do half dark and half white chocolate which gave a nice swirl look! Thanks for sharing

    Since Lily's chips are sweetened with Stevia, would you really need to add more stevia or other sweetener to the condensed milk?

      I have not tried it without - if you do not like a super sweet fudge, that may be something you could try.

    Oooh, I love this recipe. It's my go-to for making keto fudge! I've made at least 5 times and the last one I tried with crushed walnuts and chopped maraschino cherries. Divine! I love how easy it is to whip up. 😋😋
