3 Ingredient Coconut Macaroons {THM-S, Low Carb, Sugar Free}

These cookies are a little bite of delight! If you like coconut, you will love these cookies! And as a bonus, they are no-bake!

After Christmas I was tired of fudge. Now, understand, I ate a lot of my 2 Ingredient Fudge and Mounds Fudge, and it was completely on plan, but by the time Christmas was over, I was "Fudged out!" However, I still had a large jar of low carb, sugar free sweetened condensed milk in my fridge. Hence, these 3-ingredient macaroons!

3 Ingredient Coconut Macaroons (THM-S, Low Carb, Sugar Free)

If you have the low carb sweetened condensed milk already made, these cookies literally take 3 minutes to whip up.

Simply combine the condensed milk and unsweetened coconut together. Then, form into balls and place in the freezer to harden. After they have hardened, simply drizzle with chocolate! How simple is that?

I tested a few of them by dipping them completely in the chocolate. Those tasted like coconut bon-bons! However, being the Drive Thru Sue that I am, I decided that was too much work! I think the drizzle looks prettier, too.

Ingredients

  • 1 Cup Low Carb Sugar Free Sweetened Condensed Milk
  • 1 ½ CupsUnsweetened Finely Shredded Coconut
  • ½ CupLily's Chocolate Chips
  • 1 Teaspoon Coconut oil Optional
Get Recipe Ingredients

Instructions

  • In a large mixing bowl, combine 1 cup Sweetened Condensed Milk and 1 ½ Cups unsweetened coconut.
  • You should have a firm mixture (if not, add a bit more coconut).
  • Using a Small Cookie Scoop, scoop balls of the mixture onto a parchment-paper-lined cookie sheet.
  • Place the macaroons in the freezer until they are firm.

For Chocolate Drizzle

  • In a microwaveable container, melt the chocolate chips. (Using the optional coconut oil will help it melt more smoothly.)
  • Drizzle on top of the macaroons.
  • Store macaroons in the refrigerator.

    Okay, this recipe looks delicious, but please do not tell people it is sugar-free and/or low carb. Condensed milk is loaded with sugar, and it is anything but low-carb.

      Hi Jackie! Thanks for taking the time to comment. This recipe does not use sugar laden or high carb condensed milk, but rather a homemade sugar-free low carb condensed milk. The recipe to the low carb condensed milk is linked within the recipe card! ?

    But the "sweetened" condensed milk has sugar in it so this isn't sugar free or low carb. Or am I missing something?

      The sweetened condensed milk is a homemade "milk" using coconut milk and a low carb sweetener. The recipe to the milk is linked in the recipe above. ?

    The use of sweetened condensed milk means this recipe is NOT technically low-carb or sugar-free. Sweetened condensed milk actually has a lot of added sugar.

    Egg whites with xylitol or erythritol would be a better low-carb option. But this recipe is mislabeled as low-carb and sugar-free, unfortunately.

      Hi Susan! The Sweetened Condensed Milk used here is homemade (the recipe is linked above). It uses coconut milk and a low carb sweetener, so it is still low carb and sugar free. 🙂

    This states "the sweetened condensed milk is a homemade "milk" using coconut milk and a low carb sweetener", but when I click on the recipe it states 2 cups heavy whipping cream, not coconut milk. Am I missing something? Thanks, Michelle =)

      I am so sorry - there must have been a mistake with the intro. Did you see the intro on Facebook? You could also use this 2 ingredient sweetened condensed milk to make this recipe.     This recipe came up when we searched low carb macaroons. Is that a mistake? How can this possibly be low carb when using sweetened condensed milk? It’s is loaded with sugar and not considered low carb. Can something else be substituted? Like Swerve sweetener and egg whites? Not sure how much to use though.

    🙂 It took me just a second to realize with the condensed milk as well, because don't most people skip the intro everything and jump right to the recipe (like I do)? 😛 Maybe just a comment in the recipe about the homemade sweetened condensed milk as well would help with all the confusion and then the link right under it?

    BTW All your recipes make my mouth water, but I'm usually too lazy to make them. :p

    Theses coconut biscuit are not sugar free read the label on the condensed milk it say sugar is 60.9g of sugar 60.9g per 100g. unless there's one out says no sugar that I haven't herd of maybe

      Hi Alison, this recipe uses homemade sugar-free sweetened condensed milk. So there is no added sugar, and it truly is sugar-free. 😊
