Sourdough pizza crust dough

My family loves pizza (like most families, I assume), and this sourdough pizza crust takes pizza night to the next level! It's one of our favorite sourdough recipes. If you need a low-carb pizza, you can check out this one!

I'm going to show you how to make deep dish, thin crust, cast-iron skillet, or personal-size pizzas! (No bread flour or stretch and folds required for this pizza dough recipe!)

Sourdough pizza

What I probably love the MOST about this recipe is that I mix the dough in my bread machine, and then simply put it in the fridge.

I've left it for up to a week before I've used it to make the pizza. It's like having pizza-on-demand!

When I mix up a double batch at the beginning of the week, it's ready for pizza night whenever I am!

Sometimes I've pinched off a little and made a personal pizza for lunch (or breakfast). It's a great way to use a portion of the dough if you decide to divide the dough for smaller meals.

How to make sourdough pizza dough

As I mentioned above, my favorite way to mix this dough is with my bread machine (completely hands-off), but you can also use a stand mixer, or a hand mixing method. Plus, using a sourdough pizza crust recipe really elevates the flavor.

This recipe is hard to mess up - it's very versatile!

Bread machine

If you want to use the bread machine method, start by placing your warm water and sourdough starter in the bread machine insert. Then add the honey, salt, oil, and flour and set your machine to the "dough" cycle and press start.

It's that simple! You can let it run through the entire mixing cycle (mine is about 30 minutes) AND the rising cycle, or you can take it out when it's finished mixing.

Stand mixer

If you want to use your stand mixer, again start with your bubbly sourdough starter and warm water. Mix it well with a whisk, then add the remaining ingredients and mix with a dough hook until you have a smooth dough.

When it's thoroughly mixed, remove it from the bowl and place it in a plastic bag (I like to use the gallon twist-tie variety). (Or simply cover the bowl with plastic wrap and place the whole thing in the fridge.

How long does the sourdough pizza dough have to be in the fridge? That depends on a few things . . . 

I've used it in as little as 6 hours (see my video), and I've let it set for 6 days!

I will say that 1-3 days is the best window, but again, it's so versatile that it will work with just about any time-frame.

As it sits in the fridge it will rise and get those beautiful little air bubbles in the dough. 

How to make sourdough pizza crust

When you're ready to make pizza, transfer the dough to a lightly floured surface and roll it out to your desired shape.

One recipe will make any of the following:

4 personal-size pizzas

1 sheet pan pizza

2 thin crust cast iron skillet pizzas

1 deep-dish cast iron skillet pizza

1 large pizza stone pizza

The dough will be harder to roll out when you first take it out of the fridge. If you find it is hard to roll out, let the dough ball rest for 5-10 minutes and then try again.

Shap the dough into whatever shape you like, and then it's ready to bake.

No matter what size or method of crust I'm using, I bake it at 425. 

I bake the crust without toppings first, (for 10 minutes) then I take it out and add the pizza sauce and pizza toppings. 

I bake it just until the cheese is melty, then I like to broil it for 1-2 minutes until the pepperoni is crispy and the cheese starts to bubble.

Can you freeze sourdough pizza dough?

Yes! Make the dough, and let it rest in the fridge for 24 hours or so to let the flavors develop and the dough rise slowly. Then wrap the dough in plastic wrap, place in a freezer bag and it will keep for 2-3 months!

You can let it thaw in the fridge, or let the dough rest on the counter until it is thawed.

Ingredients

  • ½ Cup (113g) Bubbly Sourdough Starter
  • ⅔ Cup (150g) Water
  • 1 Teaspoon (7g) Salt
  • 1 Teaspoon (11g) Honey
  • 2 Tablespoons (22g) Oil (avocado or olive)
  • 1 ¾ Cup + 2 Tablespoons (315g) All Purpose Flour

Instructions

  • Place all ingredients in bread machine insert in the order listed above.
  • Run the dough cycle.
  • When finished, remove from the insert and put in a sealed container (bag or bowl).
  • Place in the refrigerator for 24 hours - 3 days.

TO BAKE

  • Preheat oven to 425.
  • Roll out dough to desired shape and place on a greased pan.
  • Prick all over with a fork to minimize bubbles.
  • Bake crust for 10 minutes.
  • Add pizza sauce, and desired toppings and bake until cheese is melty.

Obviously, this pizza crust is not Trim Healthy Mama friendly, since it uses all white flour. I'll have a whole-grain version coming soon!
