How To Cook Pork Chops In A Pan Low Carb & Delicious
One of my favorite things about this recipe is that it only uses on pan. Just pull out your favorite skillet (this is my favorite) and get cooking!
Here are some tips for cooking your pan seared pork chops just right without any flour (yes, it's possible!).
Season Your Pork Chops
Instead of flour on the outside of your pork chops, you'll use a little bit of garlic salt for a rich flavor. Use as little or as much as you'd like, based on your preferences (but really, can you ever have too much garlic? The answer is NO...but you also don't want too much salt, so don't go too heavy).
The salt helps tenderize the meat and the garlic salt also adds a delicious, subtle bite to your pork that will only be enhanced with your homemade creamy mushroom sauce.
Sear Them In The Hot Skillet
Using medium heat, melt your coconut oil in the skillet and have it nice and hot before adding your meat. Once you place your pork chop in, sear it 3 minutes on one side before flipping it over and repeating.
You want an internal temperature of 145 for pork, so if it takes a little more than 3 minutes on each side go ahead and cook it until done.
Let Your Pork Chops Rest
As soon as they are cooked through, remove your pan seared pork chops to a plate and cover them with foil while you make the creamy mushroom sauce. This will keep them warm, but also give time to let the juices distribute in the meat and keep things delicious.
Make A Sauce With The Drippings
And the best flavor comes when you make a sauce from the drippings in the pan...which you are about to do. Is your mouth watering yet? It should be.
How To Make Mushroom Cream Sauce With No Flour
Usually a mushroom gravy for smothered pork chops is made with flour or a can of cream of mushroom soup. But this low carb pork chop gravy is healthy for you and uses none of that!
To have a truly healthy, low carb, gluten free creamy mushroom sauce recipe without flour, you'll rely on time and heavy cream over heat to do their thing.
Let's keep cooking...
Once you've removed your pork chops and covered them, return to the same pan to make your creamy mushroom sauce. You'll get such a rich flavor because the pork juices will give a depth to your sauce that you can't achieve if you make it separately. Plus, one skillet!
Add butter, mushrooms, and garlic to the pan and sauté for about two minutes. Your kitchen will smell even more amazing and your garlic will be turning golden (but don't burn it!).
Lastly, add in the heavy cream and simmer gently for 3-5 minutes. You'll want to keep an eye on it and give some gentle stirring so it doesn't scorch. If you want a thicker sauce, you can add a tiny pinch of gluccie to help.
Return your pork chops to the pan, simmer for a minute or two, and then it's ready to serve!
Which Mushrooms Should I Use?
You can use any mushroom you have at the ready for this recipe. True story. But some are going to be better than others.
Your simple white mushrooms are going to be the most cost effective, so if you're on a tight budget this week but still want the savory goodness of pan seared pork chops and mushroom gravy then use them.
Cremini mushrooms are also commonly used for a pork chop gravy and other creamy mushroom sauce recipes, so they are a solid choice.
Portobello mushrooms, however, are my personal choice for the best flavor in your creamy mushroom sauce recipe and will give the absolute best taste to your low carb smothered pork chops. Try them...your taste buds will thank you.

Ingredients
For the Pork Chops
- 4 Boneless Pork Chops (about 1.5 Pounds)
- 1 Tablespoon Refined Coconut Oil
- Garlic Salt, to taste
Mushroom Cream Sauce
- ⅔ Cup Heavy Cream
- 1 Tablespoon Butter
- 12 Ounces Mushrooms, Sliced
- 3 Garlic Cloves, Minced
Instructions
- Melt coconut oil in a skillet over medium heat. Add pork chops to pan and cook for three minutes.
- Turn the pork chops and cook for three more minutes. (Or until the internal temperature is 145.)
- Remove pork chops from the pan and place on a plate (cover with foil to retain heat).
- Add the butter, mushrooms, and garlic to the pan and saute for 1-2 minutes.
- Add the heavy cream to the pan and bring to a low simmer. Simmer for 3-5 minutes, or until sauce begins to thicken. (You can add a pinch of gluccie to help it thicken, if you desire.)
- Return pork chops to the pan and simmer in the sauce for 1-2 more minutes.
Notes
If you would like to help the sauce thicken faster, you can add a pinch of glucommanan.

I am completely blown away by this dish! I made it exactly as stated except for one thing... I splashed two tablespoons of marsala cooking wine in the gravy after the cream went in, and I let it cook for about 8 min with the porkchops in it. Oh. my. goodness.. I was basically drinking the gravy out of the pan! Thank you SO much for this recipe!
As for the carbs added with the splash of marsla: the cooking wine I used had 3 carbs per 2 tablespoons. I only used two tablespoons and four of us ate the meal (I could have almost eaten it myself it was so good). That comes out to a little less than a carb added. WELL worth it.
