The inspiration for this recipe came from having too many (?) vegetables in my fridge. I needed to use them up, so I started dumping a little of this and that into my bowl. The result was pretty amazing if I do say so myself! Sometimes the best recipes come from what I like to call "cupboard cooking." You take a little of this, a little of that and suddenly, you've created a dish that everyone in the family will love. Magic, right?!
Low Carb Chicken Casserole
The vegetables in this casserole can be interchangeable. The first time I made it I added fresh broccoli, but I left it out the next time. If mushrooms are your thing, feel free to add them as well! If you like green beans in your casseroles, feel free to add those, too! Use your imagination (and whatever you have the most of in your fridge)! While the chicken tends to be the star of the show, adding in plenty of vegetables gives it a variety and color! This recipe makes a large 9x13 pan of casserole. That means we usually have leftovers that I use for easy lunches through the week. It is so so simple to pull out some leftovers, heat them up, and pair it with a salad for lunch! How do you store the leftovers for this cheesy chicken vegetable bake?
It's so simple to do! All you need is a sealable container that can hold all the leftover low carb chicken casserole. Then, once you add it in, simply place it in the fridge for later. I would recommend eating within 4-5 days after cooking, but I highly doubt that it will last that long!
Can you freeze this healthy low carb chicken casserole?
Absolutely. If you have a need to freeze the remainder, you can do so. Just keep in mind that due to the ingredients, when it's time to unthaw, it may have a bit of a different texture than what you remember. The flavor and taste, however, should still be the same. Cheesy Chicken Vegetable Casserole
An easy low carb chicken casserole that makes healthy dinners a breeze! Filled with fresh vegetables and plenty of flavor, this easy cheesy chicken casserole will be a family favorite!
Ingredients
- 1 8 Ounce Cream Cheese, Softened
- 1 Cup Cottage Cheese, pureed in a blender - see note below
- ½ Cup Sour Cream
- ½ Cup Grated Parmesan Cheese, the green can kind is fine
- 1 ½ Cups Shredded Cheddar Cheese
- 2 Cups Frozen Spinach
- 1 Medium Zucchini, Diced
- 1 Small/Medium Yellow Squash, Diced
- ¼ Small Onion, Diced (Optional)
- 1 Teaspoon Onion Powder
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Mineral Salt
- 3 Cups Cooked Chicken Breast, Diced or Shredded
Instructions
- Preheat oven to 350.
- In a large bowl, mix all the ingredients except ½ Cup shredded Cheddar cheese.
- Pour into a 9x13 pan and top with the remaining cheese.
- Bake for 25-30 minutes, or until casserole is hot and bubbly.
Notes
I chose to use pureed cottage cheese to ease the caloric load just a bit. Using the cottage cheese also adds an extra bump of protein. If the idea of using cottage cheese turns you off, feel free to use mayo or sour cream (or a mixture of both) in its place.
I measure the spinach when it is frozen, and I do not thaw it before mixing it.

Do you think this is a good freezer meal? If i make several a head of time then freeze before or after cooking. With the cream cream, mayo, and or cottage cheese, i am not sure. Any thoughts?

I wasnt too sure about this as I was preparing it, but this was excellent! I used my favorite baked chicken recipe for the chicken. I had about 1/2 a bag of fresh spinach I used, no squash so instead I used frozen green beans. I didnt add the onion. Instead of cottage cheese I used ricotta. I used cheddar cheese along with pepper jack. Yum, will be making this again!! This is one of those recipes where you can use up veggies you have and cannot go wrong!

Sounds very good,but I felt my heart valve close when I saw 20 grams of fat. If I make this I will make with fat free ingredients.

I made a lighter version of this with lower fat levels and sodium levels to meet dietary restrictions for a family member. I subbed Light Laughing Cow cheese for the cream cheese. Part skim ricotta for the cottage cheese. Greek yogurt for the sour cream, and nutritional yeast for the Parmesan. It is still an S meal, but not a heavy S. The family liked it. I'm sure they would have loved the recipe as written too. The combo of veggies were a hit with my sometimes picky eaters.
